    Every time these kinda threads pop up it reenforces that I should not ever try and home brew.

    Alternatively, definitely try home brewing, and make sure to read John Palmer's book called "Water: A Comprehensive Guide" as one of your learning tools. Very fun hobby, and with a little learning and a little care you can make great beer right at home.:grin:

    Lol, I’m too careless and sloppy to try and brew beer. I’d have a better shot with farmhouse ales at least if it had some bugs it still might work. Ones got to know their limitations, and I know mine, sounds like a Dirty Harry quote. I’ve had some really good home brew, most not so much.

    Palmer's water book is for the advanced course on water. There is enough Chemistry that it is a dry read.

    Most Samuel Smith beers use well water with a strong mineral taste/bitterness. They make some otherwise incredible beers which are totally ruined by the minerals IMHO. Same thing for Xingu.

    It wouldn’t surprise me if this is why I don’t care for a lot of DC local breweries. The water here is all chlorinated, fluoridated post-treatment swamp water.

    LOL!

    The brewers will at a minimum be treating to remove the chlorine/chloramine (e.g., multi stage block carbon filter). Probably doing more than that too.

    New Belgium was very picky when choosing a second location in the US (Asheville, NC) and chose it because the water profile was very similar to their original brewery location of Fort Collins, Co. I’m guessing that they used a similar methodology for picking contract brewing partners.

    It’s pretty easy with modern chemistry techniques to replicate the exact specifications of water from one location to the other. Most breweries who contract brew, or have multiple locations where they brew the same beer, are big enough that they would easily have the resources to do this, and I imagine most all do.

    That may be the driest book out of all of the homebrewing books I own, and also the second most important. Go figure.

    As an aside, most people don't realize that unless a bottled water states otherwise, it's tap water from whatever city it's produced in. Most folks assume it's highly filtered magical springwater or something. And what's up with the expiration date on bottled water???? :thinking_face:

    Like most posters already said, with science you can make any water correct for the beer you are brewing.

    There's a reason no one has ever written a book called Having Fun With Chemistry. That's the subject that flunked me out of college. :wink:
