yeah I’ve read that and I’ve used it once in a conical that has had 2 or 3 more clean beers in it with no “noticeable” issues... We’ll see what happens in the long run. The conicals get filled with 160* PBW Just in case.

Kegged 5 gallons of Oktoberfest yesterday and 5 gallons of brown ale that I used the Buckwheat honey in. I think the dark honey is a hit in the samples I had. [IMG] This is the Brown Ale. I may get a full pour of the Oktoberfest this evening since it was carbed in the fermentor before transferring. I need to get a keg post connection with correct fittings so it doesn’t leak lol.

Bottling 2 gallons of cranberry saison that I made with powdered cranberry. Even though I used whirfloc, it's a big chunky (was kind of hoping for something that looked like rosé wine). It hit 8.1 % ABV and has a nice tart finish. We'll see what it looks like after a few weeks in the bottle.

Drank a little pumpkin beer and my first galaxy/mosaic IPA last night while handling trick-or-treaters. The IPA is probably the best beer I've made to date. Cracking a mail-order Backwoods Bastard tonight for the Seahawks game.

May your brew / bottling day be fruitful!

Brewing a big American Barleywine. Using Columbus, Centennial and Idaho 7 for hops.

Maxing out my mash tun with this one as I assumed a big drop in efficiency, haven't brewed a beer this big with this system so it's a bit of a guessing game.

I just watched a video by Dr. Hans brewery and he talks about a method that seemed interesting for stouts or big beers. Seems like it would work here too. He starts the fermentation off in lower gravity wort and adds more during fermentation until he gets where he would have pitched the yeast in the beginning.I can’t get the YouTube link to paste in here right.

That looks really cool! I was reading into similar ideas on another forum a while back but eventually gave up on it. Are you purging via CO2 tank or are you using the CO2 produced through fermentation? It looks like it might be from a tank from the pic? How many oz of pellet hops can fit in the tube?

For the hop drop, I will be purging from a CO2 tank. The hops will only be in the dropper long enough to purge and drop. It might be interesting to try letting the fermentation off-gassing (which will normally be coming out through that gas post and then through a spunding valve) purge the hops, but I'm not so sure about leaving hops "warm" in the dropper for that long, getting soggy and possible sticking to the sides.

    I don't know yet, but it's a lot. Those are 3" Tri-Clamp components.

I think the CO2 tank is the way to go for exactly the reasons you stated. The hops would have to sit warm for too long in most cases to use the CO2 from fermentation. That's about where my reading/research left off. I'm really interested to see how this works out for you. Keep us updated on this one if you don't mind.

It's been almost two months since I have last brewed as my pipeline was full, but getting back into it this weekend.

Will be brewing up an ESB. Will be trying out WLP005 on this one. Grist will use some Crisp floor malted Maris Otter, blend of 55L/75L/150L Bairds English Crystal. Hopped with Magnum, Golding and Cascade.

OG target of 1.053, FG of 1.013, ~5.2% ABV. 12 SRM. 40 IBU.

Then the following weekend will get a lager going of some sort... Still debating on a Vienna Lager, Dunkel or some type of "new school" Pils with some Aussie hops I have been wanting to try for a while in my freezer. 2206 for the Dunkel/Vienna or 830 for the Pils.

Pils today with the new and supposedly noble style hop from ADHA, Adeena.

    Weyermann Ereclea Pils
    5% Best Chit
    2% Acidulated

    Northern Brewer @ 70
    Adeena @ 40, 10

    Wlp940

First time using the Mexican lager yeast. Yeast I’ve been using For the last 10 months isn’t maybe the best for more hop forward lagers. Seeing how this one works.

Brewed up my first ever NEIPA today. Everything went smooth. Recipe
    10# Breiss malt gems Pilsen
    2# White wheat malt
    1.5# Malted oats
    1# Honey malt
    .5# carapils
    16oz Orange blossom honey
Found .5# flaked corn in my supplies and said what the heck and threw it in. Was supposed to end up like 1.088 OG and got 1.071
Hops are Azzaca/Citra/Amarillo/Mosaic/and I used Cascade to bitter with. No method or thought to this just seeing how it turns out.
All but Cascade were 5min boil and 20min whirlpool. Plan to dry hop in three days with 3 of those hops? Used Imperial yeast A38[IMG] [IMG] my hop basket is as big as my kettle lol.[IMG] [IMG] [IMG] Can’t wait to drink this one.

Please update on malt profile on this beer. I've yet to go over 1/2# honey malt in a batch. That stuff is potent. I view it as (somewhat) fermentable 20L crystal malt.
