    Writing up a review of this new to the world beer from hometown brewer Revolution, DDH West Coast-Hero.

    Does it hold up even five years past the Best before date?

    Tripels, Belgians or not are not a style known to be widely aged, unlike Quads or stouts... Santé!

    look: 4.5 | smell: 4.25 | taste: 4.75 | feel: 4.5 | overall: 4.5

    Best Before 7 May 2015, so a bit past its best Before date...stored in cellar conditions.

    9.5% abv, into Westmalle Chalis, almost clear - a bit murky, with soft yeast esters and mellow malt with a soapy white head which quickly settles into a white cap ring...sediment/yeast cake on the bottle's bottom...

    On the nose, fruity subtle yeast with a solid malt backbone.

    On the mouth, light and effervescent - past its prime, for those that like young ageable beer, but for those that like older mature ageable beer, this is a real treat that is not meant to be rushed, rather savored as one contemplates its many unique facets...

    Slight warming on the way down...

    Overall, this one aged pretty well - cheers.

    Ça va plutôt bien merci .

    Just read it, yes it’s good to read that it hold up, but I wouldn’t roll the dice and age it for five years personally. Also, it’s not like I can discipline myself anyway.

    I have three (3) hobbies/passions: 1: Belgian Bier, 2: Vin rouge de France et California, et 3: le Cyclisme... many cellared Belgians that I open from time to time as one acquires a taste for older mature strong natured beers...

    I remember you from your early days on BA before you somehow disappeared a bit from the site.

    Vin rouge, or red wine for the French illiterate, no doubt there are some great ones in Bordeaux, St Émilion and the Napa Valley (Sonoma county is a good place!) but I’m not really that big on wine meaning that I spend far more on beers.

    Le cyclisme. This year has been a mess and we sadly had many French or Belgian classic one day race cancelled. Will see what 2021 has to offer. I mean can it get worse?

    Disappeared, but lurked in the background for a while - a disappointing season, but the UCI did what they could with the situation they had - this break in racing most likely extended the professional careers of most riders as competing at this level takes a negative toll on the physical as well as the mental/emotional well being of the competitors...C'est la Vie, as they say...

    Have a good Saturday. I went out with my dad for dinner last night, and moved the cats in with me. I got Bo and Chuck. Looks like I will be woke up every morning from now on at 6 am to feed them. They were both roaming around my bedroom. My gorgeous lady is coming to spend the night again at 530. Going to skyline chili. I woke up in the dark thinking it was 6pm and I overslept. Looks like the cats won't let that happen. Edibles and fun tonight. I need to toke up this morning.

    I’m surprised by that comment. I was always under the impression that Belgians were made for long term cellaring. Who knew? Evidently, not me!

    I am of the mind set that ALL beers may be cellared - as long as the appropriate expectations are understood at the onset, one will be rarely disappointed and will be rewarded for their patience and perseverance.
