I just opened a 2 liter of bottle conditioned marzen I had in the back of my fridge for almost 10 years, and it was surprisingly perfect. I was expecting it to be sour or dead or autolized, but none. It was crystal clear, a touch of sweetness, and great carb and head.

I’m thankful for that, but I wish I had some guests to share it with.

I would attach a pic but I find it too tedious.

    happy thanksgiving brewers!

Interestingly enough, I opened a bomber of the 2013 bottling of 512 Whiskey Barrel Aged Double Pecan Porter today for Thanksgiving dinner. It had languished at the back of the refrigerator for years. Yet, I found it to be little, if in any way, diminished. The flavors of bourbon, coffee, bitter chocolate, and roasted pecans were quite vibrant, and without any detraction. I have not given sufficient thought to the possibilities of cellaring.

I have a 12 year old bottle of Three Philosophers in the back of the fridge. At this point, will probably wait till it's 15 and uncork then.
