    No good reason, old recipes I started with for IPAs often included carapills, I believe the reason for using it was for head retention.
    Definatly not New England style, I can not justify the hop usage and they do not last well in my bottles.

    Do you have a different grain to recommend? I am interested in your ideas.

    Well, not a different grain, per se. But personally I wouldn't add carapils to a DIPA. The thing about IPAs and DIPAs is that if you basically scale an IPA recipe up to DIPA size, it can end up cloying, unless crystal malts are reduced/eliminated and/or some simple sugar is used. I think between your Maris Otter and a little bit of the C20, you'd have plenty of malt flavor and body for a DIPA. As far as head retention goes, the hops should take care of that.

    I’d use some dextrose as well... Any hoppy beer over 8% should have some in my book. Makes them much less sweet and a lot easier to drink. But some people like sweet..

    Brewing my last batch of the year - Red IPA
    78% Crisp Pale Ale Malt
    8% Red X
    6% C40
    4% C120
    4% Victory

    10oz total of a mix of Columbus, Centennial, Cascade and Amarillo coming in at 65 ibus

    US 05

    1.062 OG
    1.012 FG

    First time milling my own malt with the mill my sister got me for Xmas.

    "Rustic" saison yesterday:

    25% 6-row
    25% Belgian pils
    13% Vienna
    13% Rye
    11% Freekeh (Bob's Red Mill, pre-boiled to gelatinize)
    11% White wheat
    2% Aromatic

    Heavily hopped with Saaz at 60/30/5.

    Omega C2C Farmhouse, currently running at 85F and going HAM.

    Have you used the C2C before? I have been interested in trying it out but haven't pulled the trigger yet.

    Are you using this yeast for an allagash white clone or something a bit different?

    A Tripel. I'm thinking about spicing with some fresh ground ginger and cinnamon, but not sure yet.

    Yeah, I used to brew a Pliny clone, recipe provided by Vinnie, which had carapils. I believe you're correct, it was for head retention. If I remember correctly Vinnie talked about it in some Brewing Network episode.
