    My guess would be color, and maybe a little toasty-ness/sweetness. A typical Tripel is a hair darker than, say, a BGS (which is often just Pilsner malt and sugar). That said, I just made a Tripel that way (no "color" malts), and although it would meet style guidelines for color, it's definitely on the lower end.

    Checked the gravity of the ESB I brewed on the 10th. O.G. 1.059 and it’s at F.G. 1.012 I don’t really know if I got close to the style but the sample tasted like a bitter brown ale. Once I keg it Friday and let it clear pics will come and y’all can let me know if I hit or miss on the color and such.

    Tasting the NEIPA I just made while doing readings and it's got a bit of sulfur notes. Today is day 3 of fermentation. I'm hoping it will gas off. Don't usually check gravity this early but with the new fermenter I'm just generally amped up about brewing

    5% Munich
    2% Acid

    586 @ 30, 10, 180 WP

    1.064/1.012

    VT Ale/WLp030 blend

    If you haven’t tried 586 yet I’d highly recommend it. Very cool hop.

    Hopefully brewing a dry-hopped pils in the style of Enegren Brewing's Lagertha today.

    98% Best Heidelberg Pils
    2% Melanoidin
    32 IBU from Saphir in the boil + Saphir, Motueka, and Mandarina Bavaria in the WP
    More Motueka and Mandarina in the DH
    OG 1.049
    Probably W-34/70 but I also have S-23 and S-189 to experiment with.

    Brewed up a Bells Expedition stout clone today. WORST brew day I’ve had in short experience. The sparge got stuck and I tried to stir the grains and the basket slipped off the ring. UHHHGGG[​IMG] took a hour to clean that mess up. Then I had to take our new puppy for a walk right after I mixed in 7.5# of DME and had a boil over [​IMG] Then I forgot to add the yeast nutrients and Irish moss. But I got close to the O.G. According to the recipe 1.102[​IMG] Pitched it on the ESB yeast cake. Can wait to put this in the Apple brandy barrel. Here’s some obligatory puppy and old brew dog pic[​IMG]

    Holy cow man.. that's brutal. Even one of those things going wrong isn't fun but all of it is just extra rough. I'm sure the beer will turn out great, though!

    When it rains, it pours. That's a rough brew day, I had a bad one 2 brews ago but it wound up working out so far. Go grab a beer and play with the pup, I'm sure the beer will turn out fine!

    Still the volume you were expecting? Boil time was the same? Hop additions were normal? O.G. looks good.. I'm sure it will be great. just expect a few days of babysitting this fermentation now :grin:

    Expedition is one of my favorite beers. Let us know how it turns out in the (hopefully) long wait!

    Rough one, Jason. Next one will be better.

    My day went much better. Nailed my numbers, sample tasted great, in the fridge chilling to 50F.

    Yes your right, some things did go good I reckon. I’m debating when to oxygenate the wort a second time. 24hrs or 48hrs I’ve read people do either or. Not sure when too?

    Next one will be a clone of Stone’s Red X ipa I just read about in BYO magazine. Looking forward to that one.

    It’s been too long since I’ve brewed a beer this big. I think it was back in 2014 I believe and I just used an aeration stone to aerate the wort before pitching, and that’s it. I don’t think you’d wanna wait too long into fermentation to do any more aerating though. I’d just ferment on the lower end of the yeast’s temp range and begin ramping up as fermentation begins to slow. I would be hesitant to oxygenate the wort again, post pitch
