I used to work sauté at a spot that would do about on average 200-300 covers a night. I’d see more if I opened, worked sauté thru brunch then no break cook thru dinner and I’d leave at 8 ish. In that 10 hour period I’d see 400 covers? Sunday church crowd. I’m guessing but I remember going thru no lie 30 flats of eggs. I counted. Then I took a staff “beer” lol and covered dinner on sauté. Did another 200. I miss that place. I threw a full pan at a wall because a prep cook wanted to jump on the line, stand in the way and argue with me about this pie dough being “ok” when it’s was liquid loose. Oh to lose the temper and not get fired because you can do 1000 eggs and not have one come back. Typical short temper It’s the beer talking. The stories of that place I could tell you. I’m humble. When people don’t say behind and I bump them that would bother me though. I cut my thumb off no joke off because somebody bumped me. Love/hate that place. Changed my mind. Too many hard drugs

 

Im kind of feeling sad because my 19 year old Lucy is almost deaf and now shes turning blind. Damn I love this cat. Raised from a abandoned and bottle fed. Shes like my best friend...

Always hated breakfast but the place Im going back to we did 1200 covers on NYE, Christmas Eve and more on Thanksgiving. Its complicated. Many components on multiple dishes but I like the pressure. Not taking anything away from your story because breakfast is intense. Im used to being "the guy" in other words Chef, recipe development, menu development and innovative ideas. I decided to step back but not sure if my ego will allow it. We will soon find out.
