    Prep8611 must eat a lot of spinach :grin: I love pallets, use them for so many things around the garden. Not used them yet in brewing though

    I've finally got round to ordering some new ingredients, got malt for an ur weisse and dunkel weisse, as well as an APA and WCIPA . Using chevallier as the main malt for both the hoppy ones.

    Also making a Brett III starter for an upcoming Brett IPA.

    We drained it about 1/2 down and then a couple of country boys like myself got under it and hoisted it.

    Imperial Stout yesterday
    Maris Otter, DME and 8 various other specialty grains
    Magnum @ 60 minutes, Styrian Celeia @ 30 & 10
    Post boil SG = 1.107.

    I substituted 3 lbs DME for 5 # base malt (Maris Otter) because of concerns that my mash tun wasn’t big enough. It might have been okay without the substitution but it would have been very close. Better safe than sorry.

    Haven't been on here in a few months cuz I got busy with work and brewing was the furthest thing from my mind. Spent most of my weekends trying to do as little as possible. One upside of my long hiatus was getting to binge read all of the posts from ~mid January to now - lots of cool brews in this thread in the last few months.

    Summer vacation is finally near (working in a school has its perks) so I'm gonna be brewing with a friend next weekend. Planning on doing a nice American wheat with some prickly pear added in secondary. Haven't brewed a wheat before so if anyone's got a favorite recipe, feel free to share.

    Gonna post a short update about my previous batch soon (Maris Otter/Wai-Iti pale-ish split between US05 and Philly sour). Hopefully tomorrow I'll have a minute or two to organize my thoughts.

    I also really need to put the finishing touches on my fermentation fridge now that it's getting hot. It's only been about 8 months since I bought it...

    since most of the inlaws and part of the outlaws have gotten their shots, its time to get back to run and gun brewing..
    so, starting for next week
    Irish stout
    burton ale light
    pale ale
    ipa
    whole hop ipa
    and a chocolate stout.
    Could be im getting ahead of myself, but after all this time and now shots in the arm heres hopeing to a somewhat normal summer.

    transferred the neipa to the DH/Cold crash keg today. it wasn't ox'd going in. we'll see if i screwed up and it is ox'd going to the serving keg. dry hopped with 2 oz citra and 1 oz mosaic both cryo

    Brewed 5 gallons of English old ale to blend with 5 gallons of the same recipe that's been chilling in an oak barrel for over a year. (Got a bit too tannic/oaky.)

    reading scott janish's book on IPAs. lotta technical stuff that's way above my pay grade but man there's a lot that's understandable too. what a kickass craft brewing is. from norway kviek farmhouse brews to gas chromotography informed hyper chemistry kind of technical stuff, just so many ways to make good beer. cheers, all. thanks for being a good community to share this with

    Boiling a keg soured berliner wort. After fermenting with wlp001, it's going on passionfruit puree. Not sure how much yet.

    Canned 3 beers yesterday. Also bottled a traditional Saison that I’d lagered for a month or so. Fermented with Saison III. I now understand why that yeast is so sought after, yet don’t understand why they never produce it... Really enjoying the effect that the lagering had on the beer.

    Added a lot of Guava and Peach puree to a kettle sour that had finished fermenting.

    Brewing a strong oatmeal stout that will get some Geisha Coffee beans from Onyx. Going whole beans for this method. Always cracked them open. Hoping for a bit less green pepper. We’ll see.
