    Ur weiss brewed. Decided to keep the gravity down a bit this time, hopefully won't be too thin.

    60% weyermann pale wheat malt
    40% weyermann barke munich malt
    1.042
    WY3068

    45c ferulic acid rest 25m
    64c 45m
    72c 30m

    30g homegrown hallertauer mittelfruh 50m
    40g HM 30m

    Pitched at 15c, ferment at 18c.

    Brewing 3 gallons of a gluten free Brett IPA.

    Pale millet
    Biscuit rice
    Oats
    Quinoa
    Goldfinch millet

    Idaho 7
    Mosaic

    Brett III from Propogate Labs
    (100% GF!).

    Also bottling a stout.

    transferring this NEIPA from DH/Cold Crash keg to serving keg.. nervous as hell. If this batch is oxidized i'll be real bummed

    Sorry to spam the thread but I'm hopeful this isn't oxidized, at least it wasn't going into the purged serving keg. I know it's a strange photo but it's the only way I could get the photo to look like it does in person.. other photos came out orange and dark like jason's NEIPA picture in the other thread

    I'm freaking jazzed, gang! The hop character isn't exactly where I want it to be but the beer is a bit warm and not carbonated at all. I'll give it a week. Who am I kidding, I'll give it a couple days before sampling again :grinning:

    Looks good brother, I think you nailed this one. Dr. Hans puts a white background behind his beer before filming it, I wonder if that would work with pictures? On his YouTube channel it shows the beers actual color better.

    Getting ready to brew an 11-gal batch of Amarillo/Enigma IPA. It’ll be split between Dieter German Ale yeast and US-05. 2-row, some Munich, and touch of crystal.

    Was planning on bottling a 10% abv SMaSH barleywine soon, but samples are still tasting pretty sweet. I’ve stopped taking gravity readings on my beers but I probably should’ve done so for this one. Fermentation was rocking then all of the sudden seemed to stop completely overnight. Still deciding in another week or so if I should just bottle it, or blend it with an imperial IPA and make a Burton Baton-esque beer

    I def plan on getting better with the pictures lol

    I posted one with my thumbnail still dirty as hell from work that day, and a bunch of dusty crap in the background. I didn't notice until my wife pointed out what a dirtball I must look like because of that pic :stuck_out_tongue::grin:

    Thanks for encouragement. Nailing the NEIPA was huge for my confidence not gonna lie

    Brewed up an NZ themed hazy with Verdant yesterday. Love this yeast, been happily fermenting since I woke up.

    Bottled the weiss today after brewing it on sunday. Will test it out this sunday a week after brewing it. Saved some yest to brew a dunkel weiss this weekend too. Should set me up good for early summer at least.

    Welp, it's ruined! :grin::grin:

    What I think happened was I didn't seat the pin lock gas line properly and it got flat and the poppet was open and oxygen got in. It was burst carbing for 24 hours and I turned it down to 15 for 24 hours and poured a beer and it was slow coming out and flat as hell.

    I cranked up the gas and heard nothing and the dial didn't move. I reset the disconnect and I heard the whine of gas going in.

    Poured some for my wife and asked her "hey does this taste like asshole?" and her response was a fast, unequivocal "YES" with a yuck face. She said it no longer had any fruit or hop character. It's getting darker.

    Oh well. At a certain point you just gotta laugh and fix the mistakes and do better next time. I know next time I'm gonna change my water salts so there ya go. Oh well.

    Halertauer Mittelfrueh and Saphir for flavor

    OYL Bayern Lager

    Should come in around 5% and 37 ibu

    Getting a starter of WY1968 ready for a London Brown Ale. MO, lots of British crystal, Biscuit malt, and a touch of pale chocolate/ Carafa III. OG should clock in at a whopping 1.038!

    Got a big starter going of Omega Kolsch II. Plan is to save some, and pitch the rest into an IPA. The other half will get US-05. Looking forward to an IPL sort of beer with this Kolsch. Will do a bit of a lagering on it before kegging. This will also be my first attempt at purging some corny kegs with CO2 produced during fermentation.

    Also propping up some Blaugies saison yeast from bottle dregs.

    Brewed up Stones Ted X IPA today with my own twist
    12# BestMalz Red X
    .5# Flaked Maize
    .25# CaraPils
    .25#ish Acidulated Malt
    5ml of Cascade Hop resin -(not sure what the IBUs where at 60min addition) My app didn’t do hop resin and the sheet had math to figure it out. So that was hard no.
    .5oz Mosaic at 15min
    .15oz Cascade at 15min
    .5oz Mosaic at 0min-170°
    .5oz Cascade at 0min-170°
    .5os Idaho7 at 0min-170° all for 15min whirlpool
    1000ml starter of WL090 San Diego super yeast

    Will Ferment at 68° for a week then raise to 72° and dryhop with the last 3 hops for 3 days.

    I know it's advertising, but the science is legit and stacks up with what's in Janish's book. Not the cheapest pellets at $6 per ounce and only available in one ounce packages. I might try them. Curious if anyone else has yet.
