Given the 'extra' maltiness of those beer styles my guess is that the "doughy" aspect would be buried by the malt flavors.

But you let me know with your newly focused taste test.

    Cheers!

    Thanks for sharing.

I personally have only used S-04 for producing Juicy/Hazy IPAs and with the heavy use of hops in those beers there is no way I would be able to pick up "doughy" in those beers.

    Cheers!

Using Raw wheat. I accidently ordered 10lb's of it to replenish my "malted white wheat" only to find out it's a sumbich to convert.

American “chocolate” and black malts. My experience with them has always been too astringent/harsh with no chocolate flavor. I haven’t tried cold steeping or adding later to see the difference as I much prefer the UK versions especially pale chocolate and have no problem adding those to the mash right away

You are so spot on here. My so4 beers turn out wonderful...from ipa to mild to porter. S189 is also great warm! My homebrew shop had recently expired packets for 90 cents on Friday. I bought 6 of them! Marzen, Schwartz, Vienna and festbier soon to come!

Saison du buff turned me off from herbs in beer. It's gross.

I’m not a fan of red wine that has herbal notes either. Usually come across as tomato plant to me

Ginger was terrible in a pale ale, and Idaho #7 hops have been nothing but disappointing for me.

The only time I've used Idaho 7 was together with Motueka and it was one of my best IPAs to date. Definitely got the earl gray tea, along with some citrus.

However, yesterday I had an IPA with Idaho 7 and Strata that I didn't like too much. I looked up Strata's profile and it was not what I got from this beer (nor did I get any Idaho 7) - it was very floral and also tasted like melon gum.
