Guinness to open Chicago pub in 2023

    "The legendary Irish beer brand said Tuesday it will launch a restaurant, pub and brewery in Chicago’s Fulton Market neighborhood in early 2023, “hopefully in time for St. Patrick’s Day,” said Jay Sethi, chief marketing officer of Guinness’ parent company, Diageo Beer Co., a subsidiary of global spirits giant Diageo.

    The 15,000-square-foot operation, in a long-empty former railroad depot at 375 N. Morgan St., will feature an array of beers made on-site, as well as Guinness’ iconic dry Irish stout imported from Dublin, plus “Irish pub food you’d expect from Guinness,” Sethi said."

    I know that Guinness is not craft beer. But it's decent-sized news for the Chicago beer scene.

    It used to be, way-way back when. But that doesn't mean they can't do it now.

    However, this place isn't brewing, right (maybe I missed something*)? Shipping cask-conditioned beer across the ocean probably defeats the purpose.

    *Yep, guess I did -- shame on me for skimming. So yeah, if they got an idea to experiment with CC that might be a great way to try Guinness.

    I heard they serve Guinness warm in Ireland. Will they do that here as well?

    Define "warm."

    And I think you can still get the "extra cold" pour, if you're so inclined.

    Yeah, I assume this will be similar (but much smaller scale) to the new Baltimore brewery. They should have the standards and plenty of experimental/one offs on top. I checked out the Baltimore brewery while visiting family earlier in the summer. That one was worth checking out because of it's sheer size, but the beer garden is nice as well. I imagine this place will follow a similar aesthetic/service offering.

    I went to Uppers and Downers a couple years ago ( I think right before covid lockdowns?). Guinness had the upper balcony, and brought about 6 or so different beers. I have to admit, it was just as good as nearly anything else I had at the event.

    I hear the Baltimore location is pretty awesome, so I'm sure this will be similar.

    im not surprised by that at all. For the style, it’s pretty perfect, and the Extra Foreign Stout might be the gold standard. Turns out they know what they’re doing.

    I’m defintley excited to see what they’re able to do in regards to one offs and experiments.

    They hired an exceptional team in Baltimore of industry vets, will be interesting to see if they hire a similar team in Chicago.

    I must share a story about room temp beer in Eire...about 1997 I go into a tiny pub in Co. Cork, Minane Bridge. No heating, about 58 degrees F, a small hearth at the end of the room to toast your arches. "Hiya! Could I have a bottle of Heineken please?" Bartender, pushing 90 yrs old, turns around reaches up and grabs a bottle off the shelf on the wall, gives it to me with a smile. It was good. Extremely rural and fun.

    Unless they are banking on making millions on St. Patties Day the thread title should read- Guinness to Close Chicago Brewpub 2024
