    Good news guys!! The refermentation on the Oktoberfest worked. I get no butter taste on the beer now. Super excited about this. It’s is crushable now. Running both kegs through the beer bouncer filter to clear it up some. [​IMG] [​IMG]

    Bottled the chocolate raspberry stout and a hole hop ale.

    Finally kegged the Bells Expedition stout clone that has been barrel aging in a Apple brandy barrel. [​IMG] And the Belgian Quad I brewed 3.5 weeks ago is going in. I was able to bottle some Belgian Quad so I can compare the regular and BA version at a homebrew club meeting. Good times good time [​IMG]

    Yeast inventory, and purge. Got rid of a bunch of vials of yeast that I didn't use (or even try). But, I also kept a few strains that have been my go to's and purchased Omega Lutra Kveik, as I've been wanting to try a pseudo lager with it vs. a batch fermented with Augustiner. Trying to narrow down my yeasts to just 4-5 strains.

    Transferred a fresh hop Pilsner to a keg for some more lagering, until one of the other kegs kicks. A bunch of whole cone chinook still made it into the fermenter, so I wanted to rack off of the hops/yeast since it's been about a month. Samples taste better than expected – more like a festbier, so perfect timing!

    Dumped a infected batch of ipa. Used celler science yeast which was. Possibly not the cause but after 2 batches tasting funky using that yeast I am discontinuing its use. Back to Nottingham for me.

    Sunday a smoked butternut ale. Last years batch turned out quite nice so here we go again.

    Rye Porter today. Usually wouldn't do two dark ales back to back, but I figured it's not like I can easily find them without flavorings anymore, might as well have them on hand for the winter.

    Brewing for the first time in almost a year, can't believe it went that fast (been a crazy year, dad died, baby born, crazy covid related work issues, basement flooded twice with 2 feet of water, no sleep, you know life). Doing just a basic pale ale tomorrow with my daughter who is 3 years old. She picked the style, guess it's up to me to make it into beer, she gets to do the hop additions and I get to drink it when it is done. Hopefully I can build some inventory before the weather switches here near Niagara Falls.

    Plan this year was to get my basement ready for brewing inside by winter - that didn't happen. But it wouldn't be brewing for me if I didn't fight the elements.

    Brewed a Weizenbock last weekend. Was meant to hit 1.075 but I boiled off more than I should have and ended up 1.080. Oh well - fermenting away with WY3068 smelling nice.

    My wet hopped pale went into the keg today. Fresh Chinook paired with pellet Idaho 7, El Dorado and more Chinook.

    Currently has 2.5oz of a keg hop in there with a spund valve on to carbonate. Will crash it down in a few days and get it on tap shortly after. Expected ABV in the mid to upper 5% range. Will know final in a day or two.

    Tried a bottle conditioned version of the Belgian Blonde I brewed a month or so ago for the barrel project my homebrew club is doing. 5 gallons went into a Joseph Magnus barrel that a Belgian Quad just came out of. This beer is clove and crisp. A nice sweet finish and medium body. I think I’ll brew this again just to have on tap. [​IMG] [​IMG]

    Bottled a rye pumpkin beer. As Elvis on bass said, life can make it tough sometimes: my wife is bed-ridden with kidney issues (improving though) yesterday was my son's birthday party and we have a two-month-old boxer puppy running around.

    As far as the beer goes, what a difference a year makes. Dialed back the rye, upped the rum and spice and I think I nailed it as far as what I was looking for. It's one of those beers where the FG sample is so tasty that you can wait to see what it's like carbed and cold.

    I'm brewing Christian Chandler's 2021 Gold Medal winning Sable Porter. I hope I can meet up with him when I'm in AZ in a few weeks too.

    Made a starter of Omega Sundew today. Finally getting around to try it. Brewing a hazy hoppy pale ale with it. Primarily hopped with Medusa and some left over Bru-1 and Ekuanot.
