    Never really loved the west coast hops all that much, but have tried plenty. The uniqueness here is the flavor of cat-piss in a saison. Not something you come across very often. I should have clarified a bit more.

    Although you seem to be on point with your perception of the description, I'm imaging more of the aged hop sort of gassy, skunky or burnt rubber qualities you might get in older world brews, but I'm curious to find out. Anyone in this thread gets their hands on this soon let us know!

    What a pleasant morning! Daily workout done and a KT barrel aged saison, It Was Like A Holiday, to pair with the breakfast burrito! Gorgeous weather in the beer garden!

    Everyone seems to be getting hung up on one word in the description. It’s Averie so all flavors are in line. Lemon at the forefront without being overwhelming, orange and vanilla in the middle with a hint of coconut. It’s a tropical vacation in a glass!

    There is a punch of hoppiness, which is awesome. Not as much as From the Outer Edge of Inner Space (for those that have been passing on that one I say thank you so I can keep buying them).

    Friday is the day. We have a new release from Averie Swanson - Keeping Together: The Earth is What We All Have in Common

    From Averie:
    The Earth is What We All Have in Common is a 7.1% ABV Bière de Garde made with Roasted Chestnuts, Dried Oranges, and Rosemary. Roasted chestnuts were added to the mash atop a bed of @sugarcreekmaltco Pilsner, Wheat, Rye, and Munich malts. The nose offers notes of honeyed wheat and toasted rye overlaid with bright aromas of tart cherry, blood orange, and overripe strawberry. Subtle hints of cinnamon, toasted nuts, and resinous poblano linger in the background. The beer presents with a bright lemony acidity in the front of the palate, and the flavor evolves from notes of zippy fresh citrus to dried apricot depth and finally into baked red apple richness. The bitterness is delicate and tea-like, the body is medium to medium-full with a soft and creamy carbonation. A quick and dry finish contributes to the beer's drinkability, making it a versatile and really lovely pairing companion for many different dishes.

    That clinches it for me. I'm driving up for the Deep Woods release at Rev and was already considering stopping by HA for Big Hugs and more Benthic, but a new KT release seals the deal. That sounds fabulous.

    Its honestly just making me sadder and sadder that she's leaving us. Each one is more intriguing than the last one.

    Is she though? This feels like when your friend tells you he is breaking up with his gf but they are still together 5 years later. When is she leaving? Has she announced a new gig, city, move out date, etc.?

    Yes, she's said that she's packaged everything she made here. There's still a few more beers that will be released into the new year at Balmoral. She's looking for a site somewhere in New Mexico, likely in the Santa Fe area. She's talked about it on the Beer Temple podcast and the Heavy Hops podcast multiple times.

    So she doesn’t have a site yet. So the answer is she isn’t leaving any time soon.

    I wish her the best of luck, but people really need to read up on water supply in the West before opening a business there that relies on cheap water.

    Santa Fe is an upscale artist and hipster bubble that's practically a floating island relative to the rest of New Mexico. I don't think they'll be hurting for water despite the surrounding poor, rural communities that may struggle. Regardless, they're accustomed to handling water in ways we aren't out east, much like we're accustomed to dealing with snow on the roads.

    All that said, she may find a more sustainable market out there with all that disposable income floating around, particularly considering her light, refreshing and uniquely creative saisons pair well with the climate. While Santa Fe as a city kind of rubs me the wrong way, I'm intensely jealous of both them having access to her work, and her having the wider landscape at her fingertips.

    Yeah, I guess KT's new thing can be beer made from recycled brown water.
