Phase Three Brewing (2021)

Re-upped the membership today. $300 + tax again.

Eunoia 8 will be available for pickups beginning this Wednesday at 3pm - 12/22/2021
The base for E8 is composed of 80% Imperial Oat Stout, a play on our already oat heavy "Stout Recipe 2" recipe aged in mostly Elijah Craig casks and some Dickel and Knob Creek casks for 13 months. The rest of the blend is 20% of an Imperial stout recipe where we used both a significant amount of Oats and Rye that was aged in Buffalo Trace Mash 2 casks also for 13 months. After blending we aged it on Ghana Cocoa nibs and Hazelnut. If this combo sounds familiar to you, it's because this was the same adjunct combo we used in Curvature 1. Furthermore, this is the same adjunct combo as the first Side Note release I did back at RAM. Notes of dark chocolate, and creamy hazelnut lay atop a dark, thick base stout with notes of vanilla, spice and charred oak from the casks and whiskey.

 

I know I’ll probably never be part of the membership but what’s included?

 

8 bottles of Eunoia (2 bottles of 4 different beers).

Also, first dibs on everything. No lotteries / lines / etc.

That's it...at least, for the past two years. I'm assuming it's the same this year but they didn't actually provide details yet. I'm assuming we'll get an email shortly confirming.

For me, totally worth it to cop stuff like Arabesque and Minutiae without breaking a sweat, in addition to the Eunoia's (which are some of the best barrel aged stouts in Chicago, easily).

 

This past week has been crazy. Aren’t they doing an online (fastest fingers/Internet) release for memberships this year. Did that already pass?

 

They may be seeing how many current members re-up first. I believe members will always have the right of first refusal.

 

So, I haven’t missed it! Huzzah.

 

Also, I believe they are still working down the original list for any new members. At least they did for start of year 2, they only added 20 people I was told directly from P3 and they also told me I was now around 20 away from getting a spot so hoping to slide into that this year.

I think it was @bread_c that said he thought they were doing an online release for memberships. I really haven’t been sleeping much, I could be making this all up. Or maybe I’m just excited at the thought of it being a possibility, so I want it to be true.

 

Oznr sent out an email a few weeks ago with a list of upcoming memberships that would be available to purchase through the app. Phase 3 was one of them. Then a few days ago I saw someone on FB post a reply from an employee saying there were no plans to open slots through Oznr and it was error on Oznr’s part. So who knows what’s going on.

 

Yeah, my comment was a pure swag since it was in that Oznr email.

 

I fucking loved Curvature 1 and cannot wait to try a barrel aged version of that beer.

I know it was on the Facebook group but maybe not email? Yeah that jumped out for sure. Three Floyd’s used to really do weird stuff with barrels (I.e. gin barreled TIPA’s). DB Minutiae sounds like a slam dunk

 

Bottle pours at the taproom today of Eunoia 8 for us plebes that don’t already have a chance at take home bottles.

 

A plebe I am. #notshocking, it's really good. Chocolate comes through quite a bit. Could almost use a touch more hazelnut, though I'm sure others may not agree. Super smooth and a great Eunoia.

Got here early so I grabbed a small table, but it's packed and the line is out in the parking lot. They are short staffed and trying to cover pickups separate from those drinking. It's a bit claustrophobic since the branch isn't open.

 

Per Phase Three's email:

Please get your renewals in before 12/30/21!

Gotta think new memberships will open up shortly after that.

 

From P3 today:

Please do not forget to renew your memberships, you have until midnight tonight to get it done, otherwise we will start opening up spots to our waitlist.
