    1975 Thomas Hardy's Ale.

    Poured at cellar temp (around 55 degrees). Took about 100 Newtons of force to get the cap off! Poured very slowly in order to avoid getting the sludge at the bottom. Obviously zero carbonation. Pours very dark brown.

    The nose is very intense. Old sherry, very dark toffee, some pipe tobacco, apples, a slight metallic note, beef stew, and a woody note. The latter is kind of like walking into a shop where they were just cutting wood with a band saw. A nice plum note emerges after a few minutes. I keep coming back for another smell. A dark chocolate note comes through with time. This is really nice. Can't wait to taste it.

    Initial sip is intense. Wow. The initial contact in the mouth is dramatically different from the aftertaste only seconds later. Quite the rapid evolution. Burnt toffee, sherry, a bit of charred wood, tobacco, leather, plums, blackberries, a metallic note (but minimal). It's completely still, which really brings out the flavors. There is a very nice savory taste. The aftertaste is slightly bitter - that charred wood note seems to be dominant here.

    This is so clearly different from fresh, although I never really had a fresh version brewed by Eldridge Pope. This is such a fun experience. I am LOVING every sip. It definitely drinks more like a fine port or sherry than a barleywine, but it's amazing nonetheless. I want this to last forever.

    Last of this four pack, or was it a sixer? Coffee is still present but blending nicely with the rye. Cellaring hasn't hurt this one iota. Still the best barrel aged value around. Are they still brewing this (I've been out of touch for a while)?

    Bottled 2016, part of a case that’s been in my cellar for the past 5 years. This is the third bottle I’ve consumed, but the first since 2017. These obviously hold up nicely and I don’t have much to add that hasn’t already been said. Just wish these would reappear in my neck of the woods…Rochefort 10 was around for a while and I did stock up on that, but Chimay is the only Trappist Quad I currently have access to.

    It’s nice to have an excuse to pull one of these “just because” and enjoy it over the course of a few episodes of Shetland.

    Well with the announcement today from Hair of the Dog, had to open up on of their bottles from the cellar. 2015 Doggie Claws

    The bottle opens with just a small hiss, mild carbonation. Aroma is pretty vinous, a lot of grape and raisin, along with a bit of vanilla, oak, and a whiff of wildflowers. Taste is similarly complex, alternates between sweet and dry on the tongue. slick mouthfeel

    Another side by side for me, this time bottles of Trappistes Rochefort 10.

    The left bottle has been in my cellar since 2010, dated best by 8/2015. The right bottle I just purchased, it was brewed in 2021, best by 9/2026. So roughly a 11.5 year old bottle and 6 month old bottle.

    The look of the beers are quite different. 2010 is much darker, and clear (there is a layer of sediment left at the bottom of the bottle), which just a thin ring of head. The 2021 is lighter and color and a bit cloudier. thick creamy head, with amazing head retention, sticks until the bottom of the glass, leaving nice lacing. Aroma and taste on the 2010 is more complex - dark brown sugar, dates, a touch of herbal clove and plum. Similar flavors in the taste, a touch sweet. 2021 has milder notes of all those same flavors, and has a much drier finish. 2010 mouthfeel is a touch thinner, still nicely carbonated. 2021 has a much creamier and softer mouthfeel.

    Opened this bad boy up on his 10th birthday. Zero oxidation, light carbonation. Still some roasty toastiness. Barrel is still present. Probably won’t hold on to another one of these for that long, but fun experiment nonetheless.

    Here we go!! Back to the cellar and had to pull this one out after the Hair of the Dog announcement from Alan Sprints. Bummer about the brewery closing, but respect for not selling the name and brews. Some serious old school love for the beers that came out of this brewery. Not sure Ill make it through the remaining HOTD beers before the end of the month. I know @DIM is waiting for me to open that bottle of Don!!! We shall see if I can get there. The cellar is heavy with bottles to open!

    Ordered this 12 oz bottle from the vintage cellar sale on HOTD website about 8 months ago. Vintage is 2015.
    Im pouring into my snifter at cellar temperature.
    the beer pours a jet black coffee color with no light passing through when I hold up the glass. Only a few frothy beige bubbles foam up on the edge of the glass even with an aggressive pour.
    the aroma of the beer is dark chocolate and some raisins and plums mixing with a good dose of bourbon too. Some roasted malts and a little bit of oxidation but it is an appealing nose and pretty much what I expected.
    First sip reveals a totally still beer with medium to light body and very silky smooth texture. Also feels a little slick and does leave some residue on my lips.
    Flavor is sweeter up front, but far from cloying. I get some chocolate and a bit of molasses. There are also hints of raisin and plums too. Rolls to a bit of bourbon note and some hints of drying wood on the finish. The wood is sort of like a popsicle stick and does linger a bit on the swallow. Also a little char comes through. Finally, some warming booze shows through on the finish.
    This is an enjoyable beer and a robust imperial stout that isnt buried in additives. I enjoy this vintage brew quite a bit at the 7ish year mark!!

    2013 Stone Old Guardian Barleywine

    First pour is clear, second pour bring sediment that settles to the bottom of the glass. Aroma is a mix of caramel and toffee flavors and then both fruity grapefruit zest and earthy pine resin hops. Taste is similar, the malt sweetness is balanced by underlying bitterness. Long finish. Mouthfeel is both a touch oily and also a bit sticky. Overall still quite enjoyable at 9 years of age.

    JW Lees used to be shelf turds, you could always get them and often multiple vintages and/or variants would be available at a single store. Now I feel like it’s been literal years since I’ve seen one. Is that just a me thing? I also feel like at least occasionally I see a Thomas Hardy on a shelf and that’s been years too.

    2011 Weyerbacher Quad - dated 11/10/11, best by 11/10/16. In my cellar since fresh.

    Weyerbacher's big beers of yore were typically pretty boozy and "hot" and definitely improved from aging at least a few years. Quad was no different.

    Pours a dark amber in color, I held back the last inch of beer with sediment to drink separately. Thin layer of head fades to a ring of fine bubbles around the edge of the glass. Aroma is still a touch boozy - heavy on fermented fruit, raisin, and toffee. Similar flavors in the taste, starts a bit sweet but finishes dry. medium bodied, moderate carbonation. Overall an enjoyable beer to drink

    This was a pleasant surprise when I initially picked this up in 2020 on a whim. So nice that I returned to the bottle house the next day to cellar one. Age hasn't diminished this at all but also didn't add anything like I was hoping it would; specifically further enhancing the tobacco and leather hint on the finish. Oh well, that's why we experiment. Still a damn fine English style barleywine.

    Another local beer, this time from Free Will Brewing (Perkasie, PA). They used to do annual releases of both Ella and Ralphius, both barrel aged high abv beers, Quad and RIS respectively, and named after one of the owner's dogs. They used to do a few different variations of each, but the last few years they've focused just on Ralphius. The first few years, both of these beers were a bit too hot...but they've since dialed in their process for Ralphius resulting in some outstanding beers.

    My original BA review of the regular Ella in 2016: "cloudy brown in color, white head. very boozy caramel apple aroma. taste is caramel malt and alcohol burn. thinner bodied. overall a bit too hot." In 2018 I also thought it was a bit too boozy, so I stocked away a can in cellar for a few years of aging. So here we are about 3.5 years later

    Pours a clear dark chestnut brown color, thin head that fades. Aroma is heavy on booze soaked granny smith apples and dark caramel malt flavors. similar flavors, with some raisin and plum from the rich malt. Sticky mouthfeel, it's a sipper. Overall, much smoother and hides the almost 15% abv much better now.

    2017 St. Bernardus Prior 8 - the (5) year best before date is 11 07 22

    Poured at cellar temperature into goblet, clear dark brown in color with thick cap of creamy khaki colored head. When held up to the light, ruby highlights come through the glass. Excellent head retention. Pleasant aroma of toasted bread, light toffee, fig, a touch of earthy spice. Similar taste, nice balance of the dark malty flavors and the Belgian yeast. Good balance, not too sweet nor too dry. Medium bodied, but amazingly smooth mouthfeel, perfect carbonation level. Overall extremely enjoyable - definitely one of the strong dark Belgian ales that is best between 3-5 years old.

    Been in the cellar for two years now and I was quite surprised by how fruity this still is, while I had expected a bit more funk.

    Brasserie Cantillon / Cantina Giardino - Drogone

    Fruit Lambic with Aglianico grapes, from Belgium (6.5%).

    Pours a clear, deep ruby red coloration with a small, frothy, pink head that vanishes almost instantly. Smells of light doughy malt and fresh, tart red grapes, with some musty funk and oak, as well as subtle tannins also coming through.

    Taste is an excellent balance of light doughy malt, quite fresh and vibrant, tart and and sweet red grape must, some red berries, with hints of currants and blueberry, just a touch of estery spice, with hints of clove and black pepper, as well as some musty, cheesy funk, earthy oak and subtle tannins also coming through. Finishes rather dry, with a light/medium tartness and some red grape, funk and oak lingering in the aftertaste. Smooth, effervescent mouthfeel with a medium body and medium/strong carbonation.

    While I expected this to be a lot more funky and complex, it's clearly more balanced towards subtlety and nuance than a deep richness, just like Racine is, even though this is a blend of much older Lambic. It reminds me a little bit of St. Lamvinus but is even more light and subtle, with a very vibrant fruitiness that surprised me at 2 years old and delicate tart, funky, woody and tannic notes.

    Quite dry, with a vinous feel to it, this seems to exemplify Jean Van Roy's love of the wine world and desire to merge it with the world of beer. Overall, this makes for a very delicate, subtle and nuanced Lambic that makes up for certain lack of complexity with a vibrant fruitiness and vinous character, which I'm sure is exactly the flavor profile they were going for here in collaboration with Italian winery Cantina Giardino. I was also quite surprised by the complete lack of sediment on final pour here.

    Brasserie Orval - Orval

    Belgian Pale Ale sampled at 1, 6 and 36 months old, from Belgium (6.9%)

    I already did a comparitive tasting of 3 and 24 month old Orval last year and was lucky enough to manage to get a hold of a 1 month old bottle after the 6 month old one I had originally planned to drink side-by-side with the 36 month old bottle. So I decided to go with a threeway for this tasting, which may have yielded kinda predictable results, but was still quite interesting.

    I was a little surprised by just how much more fresh, hoppy and bitter the 1M was compared to the 6M, which really was significant, with the 6M feeling a bit more malty and estery. This continues between the 6M and the 36M, of course, with the 36 still managing a small, but surprising amount of hoppy bitterness and not feeling that much complex than the 6M, but being signficantly maltier, while light oxidation notes are also starting to show here.

    Having had Orval at 1, 3, 6, 24 and 36 months old now, I have loved all vintages of it, but at the same time it's becoming more clear to me that I prefer it fresh, as I do love that hoppy bitterness and citrus zest while it doesn't really seem to be getting all that much more complex at some point, just more malty, stale and oxidized.

    I can still quite appreciate it at 24 months, as it kinda turns from a Pale Ale into a Saison, but that really is the cut-off point for me, as it seems to just become more stale and oxidized, rather than complex in my personal opinion. While it's really not that bad at 36 months, I never quite understood how oxidation, generally considered a flaw in beer, is suddenly perceived as a good thing for certain styles, which I disagree with.

    Overall, this experiment has once again reinforced to me that beer is meant to be consumed fresh, no matter the style, except perhaps for Geuze. I still found the 36 month old bottle enjoyable and it's really not that oxidized, but I still clearly prefered it fresher, which kinda makes me look less forward to the two bottles in my cellar that I'm planning to drink at 4 and 5 years old, but we'll see.

    2010 La Trappe Quadrupel, 750 ml corked and caged bottle. In my cellar since that year.

    pours a clear dark brown with thin cream colored head. when held up to the light, brilliant garnet color in the edges of the glass. pretty decent head retention for a 12 year old beer, a thin covering remains as I drink. aroma of candy sugar and light molasses with fruity undertones - peach, berry, fig. taste is similar, a touch of earthy spice, presumably from the yeast. flavors are deep yet very smoothed out. starts a little sweet but fairly dry finish. medium bodied, soft carbonation.

    Poured at fridge temp, but allowed to warm over 20 minutes or so. Pours very dark brown - almost black. No head. Lots of very tiny bubbles emerging in the middle of the liquid, and this continues.

    The nose immediately reminds me of a VERY old English barleywine. I'm talking 20-30 years old. Very strange, but definitely not a problem! Old port, leather, dark chocolate, pipe tobacco, charred wood.

    The taste is incredible. Sherry, oak, figs, almonds, leather, black licorice, burnt toffee, ash, plums, molasses, and tree sap. What an intense combination of flavors! I don't think I have ever tasted a 3-4 year old barleywine with this type of flavor. So incredibly rich.

    Mouthfeel is fairly thick and robust, but still hanging around a medium. Nothing like a big stout. The alcohol heat is there, but not overpowering. Fairly sweet on the aftertaste.
