This Belgian - 3 feet of snow then a rain storm (separated by time - but rained for about 24 hours straight so it melted everything at once) - flooded again. Beer is safe in the closet this time. Favorite "regional beer" to drink, but man the universe doesn't want me brewing them for some reason.

[IMG] Bottled the Belgian Quad that has been sitting in a Apple Brandy barrel for 4ish months. I put this in after I pulled a stout out. Fun fact, I fermented this beer on a yeast cake of a Belgian blonde ale I brewed for my homebrew clubs barrel age project. So I get 2 BA beers out those 2 brew days. Score!!

Bottled up three non-beer fermentations today. A sparkling red wine made with Cali grown Barbera grapes and two fruited ciders. Cider 1 was refermented on Albariño grapes and dry hopped with NZ hops, the other refermented on freeze dried Strawberries and lime zest. Had to post the color of the strawberry cider…

Oh ya! I’ve used Chinook and Amarillo before but honestly I don’t think you can go wrong. Cider is a great canvas for hops.

This batch I only used .30oz per 1 gallon just for a hop accent. Naturally fermented cider finishes bone dry so there’s nothing to balance the perceived bitterness from the dry hop. I typically go light, .50oz or so per gallon. I think you could bump it up if you make a sweeter style cider.

Time to transfer the gf New Zealand Pilsner to the keg for lagering. I'll hit it with some gelatin as well.

Also, brewing my gf adaptation of the AP American Brown Ale. It has become a regular in my rotation. This time around, I'm changing just 3.5% of the grain bill to get just a touch more chocolate in the mix.

Brewed a west coast IPA recently with 2-row, and 10% oats. Centennial for bittering then hit it with lupomax citra and mosaic the rest of the way. 6% abv and 60 IBU. Haven’t used citra and mosaic in forever, I’m calling this my cheater Hop IPA!

Brewed a West Coast IPA from Morebeer yesterday. Got the kit really cheap by watching the Free Beer Friday videos on YouTube from the Morebeer channel. This is the Chux kit. They had Danville brewery build the kit based off of their West Coast IPA. Looking forward to this one. [IMG]

Brewed up a double batch of my Surly Darkness clone recipe (plus a little rye malt because I like rye) last weekend and will be putting it into a rye barrel today or tomorrow. Third brew session at the new house went great so feels like I am fully back in the groove. Planning to let it sit for 2-3 months in the barrel
