Dovetail Brewery (2022)

So, #trashpalate confession here...Sugar Creek Pilsner has MONSTER sourdough bread notes. Didn't notice on first blush, but I noticed it as it warmed, and a second can has confirmed it.

The other flavors are still there, but this is basically liquid sourdough bread. And I'm here for it.

 

Just read up on the backstory of Sugar Creek Pilsner and it is really cool! Bravo dovetail for resurrecting this beer after all these years!

As a Rustic Saison fanatic... Words can say how excited I am to see this happening! Caught me by surprise that Dovetail would brew a saison.

 

Naturally. How else to homage? (We’re doing a very short run of less than 100 bottles as a fun project for ourselves, mostly)

 

Seriously? I was only kidding -- green bottle skunk, and all.

 

Yeah! I once read how some ppl prefer the “skunk” flavor of certain beers in green bottles (but not sure whether it was just “what they know,” or an actual preference), so it seemed interesting to me, but it also seemed appropriate for the beer we made.

It’s a small run and I’m not sure it will see enough light in its time to affect the hop profile, but that’s the fun

If you want authentic green bottle saison, drive to Penrose and scoop up as much Silo as you can.

Pilsner may have made it to McHenry. Saison cans are a taproom-only release.
