    That third week of October cold front is the only thing keeping me going. Maybe we'll get lucky and it'll arrive early enough to make the State Fair bearable.

    August is going to kick our ass. As long as the electricity stays on I'll try to remain calm. I need to hit the fair this year. I haven't been in years.

    Salmon looks awesome. Really the only way I eat salmon- smoked or raw in sushi. Gets too fishy for me when its grilled or seared.
    I use real maple syrup on mine after dry rub -comes out nice.

    ...I've heard about using maple syrup to baste it with while smoking it...it sounds intriguing, so perhaps at some point...right now. I've found my go-to procedure to wet brine overnight with sea salt and brown sugar, and then my aforementioned dry rub...then I try to keep the smoking temperature around 185-190 °F to reduce the albumin to a minimum (not always easy with a charcoal smoker), but then I like lower temperature cooking for almost everything I do to keep things moist and tasty...why did I ever think well-done steaks were the epitome of grilled meat...?!?...:grin:

    No lie, the 2-week outlook on the numerical models looks brutal. We used to go for OU/Texas every year but it became such a nightmare between the game and regular fair crowd that we've been going during the week a bit earlier and just have a watch party at home. I'd kill for another year like we had in 2014 where we got a Blue Norther on Friday night that wiped our temps down into the high-50s/low-60s.

    Oh yeah UT/ OU day is something. Iv been to that game once back in the Mack Brown days. It can get hostile in Dallas on that day, especially at night.

    Those can be a bit of an acquired taste. I've grown to really enjoy them, especially this time of year.

    I was thinking that. Those flavors can be intense. I'm not use to tasting them. I enjoyed it tho. I like that sour tangy mustiness. Pretty sure I'm catching hints of that farmhouse every time I burp. Lol

    Having a Snow Ghost NEIPA at NoFo Brew Co. Typical NEIPA these days. A little hop burn but a decent beer. Naturally, this has been NoFo's most popular beer but not their best IMO.
