I bought multiples of a few things last year that I'm pretty sure will age magnificently and the anticipation is killing me. What beers in your cellar are you looking forward to most in 3 to 5 years? Here are mine, E.H. Taylor Bigfoot. Very good if a bit rough out of the gate, very curious to see what some extended aging does. Goose Island 2 year Old Fitz Barleywine. Remarkably smooth early on, hoping for a little chocolate and more fruit in the years to come. Hair of the Dog Matt 2022. Other vintages have aged beautifully and this is already improving in under a year.

As someone who only started cellaring beer maybe 2 years ago, I don't have lot on hand, but I'm sitting on a few of each- Bigfoot Narwhal Mad Elf Mad Elf Grand Cru Mad Elf Bourbon Barrel Aged Solzhenitsyn Vintage 2020 I think I'll hang on to a bottle of Blithering Idiot for a while, in part because I don't know if I'll see it again.
Fun thread! I definitely have some fresh Cantillon that I am looking forward to try in a few years, as I always love these with some age. Others: Bigfoot!! Duh. 120 minute IPA - bought a couple and I'm looking forward to see how they evolve Utopias WWS - it was hot when fresh, so I'm hoping it calms down in a couple Old Cellar Dweller from Driftwood - a hoppy barleywine that will likely chill out and evolve
In 2026, no beers will 'expire' in my cellar. In 2025, the following will: Boon Oude Geuze Black Label (2015, Batch 1), Cuvee van de Keizer Blue (2015), Liefmans Goudenband (2015) and Sint-Bernardus Christmas Ale (2021).
I don't have anything fresh that I'm looking forward to so much right now, but by 2026 I will have the oldest Bigfoot I've ever tried so that will be exciting
Hoping to be around in 5 1/2 years to crack this giant bottle of 2009 Super Kitty, definitely the best year for this amazing strong ale from Keegan Ales. It's designated to be last soldier over the hill in my cellar.
I feel most lambics are best with about 6 to 8 years. Some like Cantillon Kriek and Rose de Cambrinus need that much time to show well. Other fruited lambics can be consumed earlier. Hanssen’s Scharbeekse comes to mind. Oude Beersel Kriek at six years is about right. Most stouts need at least a few years in bottle. Bigfoot tastes fine at 20 years. It often depends on the producer not the style. Fresh Struise Pannepot is great.
