    For those that avoid the other socials..Here are details on the special variants during tomorrow’s release from Rev’s Instagram and Facebook


    Tomorrow, beginning at noon, we'll be pouring V.S.O. Gravedigger alongside some killer, scrumptious, dreamy, complex small-batch draft variants, including a preview of our new Brazilian lumber.⁠

    These draft-only variants will be at the Taproom (3340 N. Kedzie) when we open at 2 p.m. All killer, no filler, draft only, and available for as long as they last:⁠

    Gravedigger Piggy (15.1% ABV) - Och! After two years in a young, wet WhistlePig Rye barrel this expression of Gravedigger Billy Imperial Scotch Ale boasts a striking American oak and whiskey profile punctuating an off-sweet caramel, cherry, and date malt structure two years in the making. Like a wooden kilt for your mouth.⁠

    Amburana barrel-finish Petit VSOJ (15.2% ABV) - Fermented on French oak and aged in a single Willet bourbon barrel for sixteen months, then finished in a single Brazilian Amburana barrel for two weeks, this unblended sweet component Straight Jacket boasts a blend of vanilla-laden French and American oaks, as well as the sweet, spicy character of this exotic wood.⁠

    Sanctuary #31- Amburana Double Barrel Deth Jacket (15.8% ABV) - A blend of barleywines from an Elijah Craig 18 Yr bourbon barrel, and a sweet component oatmeal stout from a Blanton's bourbon barrel were blended and aged together in an Elijah Craig 8 Yr bourbon barrel before being finished in a Brazilian Amburana cask. Notes of cinnamon and baking spice evolve as the beer warms into coconut and finally French toast and maple syrup. A zero-adjunct pastry stout.

    Primal Coconut Deth (13.8% ABV) - This single Wild Turkey barrel of young, sweet component Deth’s Tar is infused with 25lbs of toasted coconut. Punchy American oak and bittersweet chocolate notes lay beneath a torrent of tropical bliss which becomes ever more pronounced as it warms.

    Wow, that draft list looks outstanding. I don't think I have had any Amburana barrel aged beers (kicking myself for not picking up the Oskar Blues / Cigar City collaboration when it was available locally) but I've heard good things. Maybe DW 2023-2024 is the Season of Amburana?

    I've had a few, mostly from Firestone Walker. Los Lenadores was a spectacular beer. Amburana Parabola was underwhelming for me. When amburana is done well it's amazing. It can impart a lot of cinnamon and baking spices IMO. It can also be easily overdone.

    Not sure why I haven't thought to mention Amburana to @BeerCruncher when he's polled us for ideas. I bet these beers will be great. Happy to see Rev tinkering with it.

    EDIT: After seeing @FBarber post it reminded me that Los Lenadores was a FW/Cigar City collab.

    That Bamburana beer was fantastic, agreed with @FBarber about it. I hope they'll do that again some day.

    Both of those amburana-aged beers sound fabulous, I hope they'll make it to Sunday when I can drive up.

    Petit Jacket is the winner of the taps at the Brewery. VSO Gravedigger is delicious as expected but feels a little one note compared to the VSOJ and Deth Jacket. Rev is still king and no one can make me think otherwise.

    I almost agree. Petite Jacket was second for me. Amburana DB Deth Jacket was the winner for me. The only one I didn’t love was Gravedigger Piggy, and I’m sure I’ll be in the minority.

    So, what I’m saying is if anyone wants Maple Deth, I know a guy.

    I don’t think I’ve ever had a beer aged in amburana before. Both really surprised me. I feel like I got more coconut from that than I did from Primal Coconut Deth. It’s crazy to me.

    It can do some pretty awesome things. Coconut is definitely one of those profiles it'll impart. I'd love to try these and I'll be up next weekend, but not holding my breath anything lasts for me.

    Thinking a bit more of amburana aged beers I've had, Triptych did a blended BA barleywine collab with Foreign Exchange a year ago or so. The non BA portion was aged on Amburana for a bit. You would've sworn it had adjuncts in it. It does some wacky stuff to beer.

    Agree. But Primal Coconut barely tasted like coconut. Big disappointment.

    And I've gotten cinnamon, cola and vanilla out of some amburana aged or staved beers too, though subtle.

    Cinnamon for sure. That's a note I've gotten on every amburana beer I've had.

    Anyone wear a kilt there yet? I assume this is inevitable.
