Beer deliberately bottled still

    3F has a released a beer called Doesjel a few times. Doesjel, I guess, translates to "lazy". From my understanding it is basically a gueuze blend that never carbonates. I've had it and enjoyed it FWIW.

    I just half heard something on NPR explaining why flat soda tastes sweeter. Something about the bubbles actually blocking the sugar from getting to the taste bud? I wish I had been paying more attention.

    Follow the science:

    “Why does fizz taste so good?

    Have you ever noticed that fizzy pop tastes better than flat pop? That has nothing to do with the bubbles. It’s actually because in a fizzy drink, the dilute carbonic acid creates a slight burning sensation on your tongue.

    This doesn’t happen when pop goes flat. When pop is left out in the open, CO2 continually escapes. Let’s look at that chemical equation again.

    H2O + CO2 ⇋ H2CO3

    As CO2 bubbles away from the liquid, the reactants and products move again towards equilibrium. This causes the backward reaction to take over. As that happens, the concentration of carbonic acid in the drink gets lower and lower. As the amount of H2CO3 in the beverage goes down, so does the soda’s ability to bring about that tingling sensation on your tongue.”

    as I was researching what I had heard on npr, I did come across this information. The segment on science Friday was dealing with saliva and they specified that they were not referring to what you described above.

    I have no clue when it comes to the science of such things but there are certain beers that I prefer bottled to canned.

    First and foremost, two classics from Troegs - Nugget Nectar and Mad Elf.

    Intentionally uncarbonated a beer is a skillset that most brewers don’t have, or understand. A profitable result permits a new involvedness per a density/complexity ratio…Belgium Lambic – mentioned above – is the main driver/influencer, which is occasionally (often) served via stoneware

    There are several stateside brewers that approach this well/ok: intention to style…E.G.

    New Image Brewing’s Estufa
    Macro Oxidized Barley Wine

    Is packaged still and maybe the most eye opening beer I’ve had in the last 3+ years. Highly recommend

    I have a hard time imagining carbonated bourbon or flat beer being better than their normal forms.

    I drink my bourbon and scotch neat (sometimes adding a few drops of distilled water to single malt)—but squirting a spritz of soda water is pretty common and, if classic movies are to be believed, used to be the only way people took their whisky. There must be something to that. But deliberately flat beer is another matter entirely.

    Fermented liquor seems to be what some of these breweries are going for, so carbonation wouldn't fit.

    I've enjoyed a few still beers, some of them with @John_M

    • Back in the late 00s, BFM had magnums of Bin Chien aged in a variety of barrels. Phenomenal stuff.
    • Xyauyu, as you mentioned, @DIM
    • Cambridge Brewing had a really good still barleywine the one time I was there. Arquebus, I still remember the balance blowing me away
    • HotD's Don, especially the 2022 release. I drank a bottle over 6 weeks and felt it could go longer. There was a vintage of Bourbon Fred, the 2013, I think, that was fantastic.
    • More recently, de Garde released Munuit, which was fantastic, especially if you were a fan of the Lost Abbey Veritas 009.
    • The still lambics mentored are very good too.

    Having a 2020 HOTD doggie claws tonight. Completely still (unintentionally I'm fairly sure). Still pretty tasty, but I think undeniably it would be more enjoyable with a touch of carbonation.

    Yes, it's the OEC Cuvee de Gorgoroth (which comes in bourbon and Rum BA varieties). Carbonation would definitely detract from the beers. Both are incredible and just oozing with flavor.
