Had the pleasure of visiting Euston Tap. It's certainly unusual. The ratio of taps to square footage of interior seating is definitely different from most norms. I don't know the technicalities of how their cask beer is dispensed without being pulled. The Adnams "Irish red" I had there was great.
My guess would be the casks are stored higher up and the dispense via the sidepull faucets is a gravity pour. Cheers!
Re: Euston Tap – The cellar is below ground, which entails a crawl space ladder: most of the equipment had to be reassembled upon installation …They use the ‘Scottish air pressure system’ 2017:
It seems like the method of dispense via tall fonts in Scotland has been in decline for some time: "Air pressure is a dispense system employed almost exclusively in Scotland, where it is the predominant traditional method. An electrical compressor keeps a tank filled with air pressure of between one and two atmospheres. This pressurized air is used to force the beer up to the counter dispensers. In Scotland, the system is very much in retreat, with conventional handpumps replacing tall fonts in many outlets. An obvious, somewhat ethical problem with this method of dispense [tall font] is that the cutomer has no simple way of knowing whether a font is a keg or cask-conditioned beer." — Cellarmanship. I visited The Referend (Kutztown, PA) yesterday. Had two of their cask beers from their beer engine: A Day in the Country. Spontaneously fermented golden ale aged 14 months in oak puncheons, conditioned on homegrown rhubarb, spruce tips, elderflower blossoms, and lemon balm Berliner Messe - Gloria (DDH Talus). Spontaneously fermented pale wheat ale, dry hopped with Citra, Mosiac, & Simcoe, then dry hopped with Talus
@zid - The iteration is/was richer, smoother, and mellower due to the dispense: ↓CO2 + ↑°F… An intensity that developed and built upon the residual sugars without becoming under-attenuated, given a heightened malt bill, besides a calm/evocative – fermentable – acceptance on diacetyl. Notwithstanding, the concealed noble hop effects over the subdued ‘resin-lined’ impacts, which preceded the (deep) grain taxations
