I'm a Shaun stan dating back to the Brewtella release, but I'm still super impressed with Elmhurst after three visits. The staff is great, the beer is top-notch, and the half-dozen or so items I've tried so far from the food menu have all been delicious. I love how chill things are with the cellar list as well. Now I just need to go with another stout lover or 10 so I can dig into the cellar list more.

Is the cellar list published online somewhere? I didn’t see anything.

I haven’t seen one. I believe it was four beers, each $50 or $55 for a 750ml bottle, and included pyramidal, eunoia, and others I don’t remember.

I don't think they publish it online as a general rule (perhaps to avoid complaints if they have an out of stock), but each time I've gone it has been printed and left on the table as a second menu.

Anybody been to Elmhurst recently and know what bottles they have on the cellar list?

It's just the same adjuncts over and over. Happily giving up on being an Ambassador after this season.

@Bbear I'm not picking on you, just using your post as a catalyst to kick up a discussion.

Every so often, in virtually every brewery thread, the topic of "same adjuncts" comes up. Obviously this is more of a complaint than a critique for some breweries than others. That said, after 3-5 years it seems like any brewery is going to hit that issue, regardless of whether some have a preference for particular adjuncts like SP and Cinnamon.

It doesn't seem like this can be avoided. At some point you have to start redoing things you already did, or start reusing adjuncts you "just" used. I'm not sure how you get around this.

If you take the Goose Island route, you do something like Vanilla every 4-6 years, maybe start redoing other popular variants after 8-12 years. But everything else is new and a crapshoot as to whether people will enjoy it. Contrast that with a brewery like HA who puts out a very similar Benthic Box every year, and just subtly rotates beers every few years. The only other option is to just kind of rotate through every combination over and over again. Right?

Beginning Friday, we'll have the newest installment in our ambassador-only barrel-aged stout family, Eunoia 15, on tap through the weekend while it lasts.
The base of this beer is a blend of two imperial stout recipes we use. The blend is mostly made up of beer that came out of Willett Bourbon casks, 20% Four Roses, and 10% Wild Turkey for eighteen to twenty four months - averaging out at twenty months. After blending we added in a tiny bit of caramel, balanced out by a touch of Saigon cinnamon, Madagascar vanilla, and Ghana cocoa nibs. Each ingredient truly plays off each other, while leaving plenty of room for barrel and spirit character to hang out, too.

I got a chuckle out of “leaving plenty of room for the barrel to hang”. That has never happened..

Thought Eunoia 15 was really good. Being a member of the I hate cinnamon club, I was a little worried but I would say cinnamon is muted. Vanilla and cocoa stood out more to me.

Agree. also not a cinnamon guy, and thought it was great. Smelled like caramel chocolate candy. Cinnamon started putting its 2 cents in as it warmed, though

Second review read and no barrel mentioned. Sounds like another plain p3 “BA” stout

This level of nerdom is very welcome around here. Excellent first post. Dude must have family in the cocoa nib business.

Consult your spreadsheet for us. How many straight up BA beers have they put out? Also, sweet duck.
