Hill Farmstead Clara Puncheon

    I'm a little confused by this entry. Clara clearly states on the bottle that it spent time in a puncheon for 4 months. Yet there is a separate Clara Puncheon listing. Was there an extended puncheon aged Clara at one point? Do these two need to be merged?

    There is some variation across each batch, which is based on conditioning & checking: Two Examples Below. Nonetheless, Shaun did use gin barrels at one point, which should be separated…the other(s) could be either be combined, or further specified (e.g. 4mos, 5mos…)

    The 2020 release was mentioned as specifically being aged for 4 months in puncheons. The entries probably should be merged since that version isn't listed separately on Hill's own beer archive.

    Well, those aren't very nice words @Jbrews. I thought we were friends? What is confusing? If anyone has any questions, you can send them to the brewery and we are always happy to answer them. If there is a conflict of information between our website and elsewhere, it is likely because we made a mistake and forgot to update something.

    Clara is conditioned in barrels until the acid/texture had developed to the point that we like. Sometimes this is 3 months. Sometimes this is 5 months. In the early days of the brewery, Clara was stainless steel (prior to adding puncheons in 2013). Since 2013, it has only been conditioned in puncheons, with a few larger Foudre batches over the years. Ultimately, it is always conditioned in wood.

    Perfect! Thanks for the clarification. So basically anything from 2013 and before is just Clara and everything else after is Clara Puncheon. Plus I doubt @Jbrews was being dead serious. Just trying to be funny.

    Yeah, that’s humor. I don’t think I was offensive. And at times, if you don’t know all of the history it can be confusing.
