    Thanks - year 3 of smoking turkey and duck and I think I finally have it down to a science.

    Very simple preparation - compound butter with fresh poultry herbs (rosemary/sage/thyme), salt, pepper, and garlic rubbed over the outside. Cooked on beer soaked pecan + cherrywood at 200-225. Drip tray loaded with apple cores, quartered lemon, quartered orange, garlic, onion, celery, peppercorns, remainder of fresh herbs, and hard cider).

    I only stop grilling when the Fahrenheit and Celsius scales intersect. Fortunately, that doesn't happen here too often.
