Outstanding clear and bright color, golden; good, moderately dense carbonation; very thick head, white, dense, semi-creamy, rocky, and very long lasting. Great smell; somewhat grassy with tropical fruit undertones. Nicely balanced flavors; mild, almost biscuit-like malt base with a very nice, well-rounded and complementary hop bitterness; light spicy elements. Medium body; crisp with a snappy with a light, dry bite on the palate.

This is an exceptional India pale ale. Clean and refreshing while exuding balanced and complexity all around.

...got the salmon wet brined (12-3-1 ratio of water, brown sugar and kosher salt) and now developing a pellicle (thin, tacky film) before adding a dry rub (brown sugar, sea salt, black pepper, and dill) before hitting the smoker (alder wood @185 °F until an internal temperature of about 130 °F is reached)...beer brats with hickory will follow...

Pours a clear, dark, mahogany brown color, opaque in the glass; one-finger + thick head, dense and creamy, light tan color, long-lasting. Nice blend of scents in the aroma; light cocoa, delicate bourbon tones, light all-around spiciness. The flavors bring cocoa, cardoman, and bourbon to the palate; subtle overall sweetness. Full bodied, soft, velvety, spongy; a beautiful touch of boozy heat and warmth.

This gorgeous beer is balanced and complex, easy to drink even with its high ABV, and very satisfying.
