    First pour was phenomenal. Another required.

    Bought a small cut of meat I don't think I've had before - Choice-grade, 1st-cut, rump steak.

    It was on discount cuz starting to get gray. Pro Tip: that's exactly when you want to eat it. A few days of wet-aging produces similar flavors to dry-aging at a fraction of the time and effort, but obviously not a true replacement.

    It's been dry-brining since this morning with Kosher and MSG. Meat snack for afternoon grill.

    Obviously a cheap, fatty, low-value cut... but I'm always intrigued by any piece of a cow I've not previously consumed.

    I I agree!! The rump is right below the Picanha or rump cap. I just cooked picanha a couple weeks ago - Brazilian style- on a skewer and rotisserie. The fat cap provides a nice baste throughout the process. If it was me I'd sear and then slow cook indirect but anyway enjoy your steak![​IMG]

    Picanha is the queen of meats. Love it so much. Yours looks bomb.

    And that's exactly how it's always presented at the local Churrascaria (Brazilian Steakhouse) we used to frequent. Like 3 times per week (work lunch!) some weeks lmao.

    I need to do that on my rotisserie. Cheers!

    Space Lion an IPA brewed by prob my favorite lager brewer OEC Brewing.
    An IPA with American hops coolshipped and open fermented. Now this is my idea of an IPA!
    Beautiful golden clear and 6.4%[​IMG] [​IMG]

    I could only hold out just so long on this fresher batch of Urquell BB mid-Nov.

    We live in a day and age where folks are marrying their pets.

    No one will even bat an eye when I marry this beer!!
