New brewery opened up in Chicago about two weeks ago in Pilsen. It took over the former Lo Rez space. https://www.monochromebrewing.com/ On opening night they had: a milkshake IPA called Epsicle Layers that tasted pretty close to an orange creamsicle, a BBA imperial stout called tetrachromatic aged 16 months that was actually excellent, a DDH DIPA called Project Phoenix - was a little too bright for my tastes, and a pineapple coconut seltzer called Chroma that I didn't try They also had ~5 great guest drafts including from Beachwood and More. They said they were planning on always having some guest drafts which I appreciate. Overall, solid showing for their opening night, glad the space is being used, and glad they had some IPAs on draft... Sounds like they are working with the brewer from Whisky Hill.
To add more to this, I believe Luis brewed at Arclight in MI before and released some BA bangers. Curious to see what else comes from these guys!
To add a little more, Luis also most recently brewed at Brothership. He has a proven track record. I am excited about the new place. Even better that it's 10 mins from where I live.
Looks like a cool place. I’m sure the locals will appreciate this place knowing how much Pilsen residents love gentrification.
I stopped by last week. The NEIPA was really good. Their BBA Stout (aged 16 months) was outstanding. Very well balanced. Could taste the pedigree. Looking forward to seeing what else they brew... Inside was still pretty much Lo Rez...
