    Good morning BAs! My sleep schedule is out of whack following long travel from Monday night through yesterday afternoon…up and having some coffee - Guinness Foreign Extra Stout:

    Good morning Ladies and Gentlemen.
    I confirm what "The Founder" said: "BeerAdvocate is the best beer community", even if it wasn't necessary to hear it... let alone repeat it.
    So after a bitter sporting evening decided not by the players, but by a character dressed as a referee, whose face tells a lot about his conscience (just go and see the face of the basketball referee Carmelo Paternicò, just to get an idea) , I decided to focus on something much more rewarding than seeing that human shit ruin my mood.
    I drank this last Sunday in Bologna before Game 2 of the basketball Scudetto Final: Virtus - Milan.
    I recorded a vowel with the taste notes that I'm transcribing.

    Brasserie Cantillon (BEL) - IRIS (Vintage 2020) - Geuze (6,5%)

    75 cl bottle (€35 at the Madama in Bologna before Virtus Milan 72-64)
    On the label: "Bottled on: 25 March 2020 - To be drunk preferably within the 10 years after the bottling date".
    The main characteristics of this Cantillon is the use of Pale malt and the complete absence of malted wheat. Furthermore, 50% flowering hops are used and not the usual "Surannée" hops aged even more than three years so that the alpha acids degrade properly.
    Finally, the must is subjected to dry hopping two weeks before bottling. The refermentation in the bottle occurs with the addition of the "liqueur d'expedition" (a syrup with a certain sugar content, also used for example to increase the concentration of sugars in the sparkling wine produced using the "classic method").

    Freshly uncorked floral notes, topped by notes of soaked wood and a slight tendency towards balsamic vinegariness.
    Poured it's intense orange to red in color and obviously produces minimal foam.
    In the mouth, a "Geuze" body that flows lightly, sweetened by Pale malt.
    very complex taste in the mouth with changing nuances: I'll start by saying that I didn't particularly notice this hint of fresh hops except to bring back those herbaceous and floral nuances that are part of the range of aromas I encountered.
    Above all, the woody taste prevails, of soaked wood, soaked in white wine. As they fade towards the finish, more floral notes emerge (herbaceous but not intense, more delicate) and also a hint of citrus, particularly cedar.
    Astringency clearly noticeable, but not yet out of control.
    The finish is quite dry (I absolutely did not find a bitter contribution from the "fresh" hops) even if a slight astringency remains on the tongue, while the more floral notes remain on the palate, with light nuances that take me back to the citrus peel.
    Pleasant, admirable but not easy to drink. It's right to share this bottle because the acidity is still very present and after a while it recalls that rusty feeling in the stomach that should be alleviated with a nice piece of bread and cheese.

    Final Impression and summation: 3.75 Decent pale ale: too bad the pine quickly died. I’ll buy more of this one if I can find it fresher.

    Orange Amber gold color with small white cap and little lacing.

    Aroma of sharp, bitter, piney/citrusy hops with an emphasis on the citrus.

    Taste on entry is delicious hop icing on a sweet malt cake. Yes, this stuff is good. Hops are sharply refreshing and redolent of citrus zest. Malt is rich, plentiful and could stand alone in other beer styles. The thing that strikes me most is balance from beginning to finish which is clean, lasting and refreshing.

    Full texture with balancing carbonation.

    The overall impression is great balance matched with satisfying flavors.
