    Trillium Congress Street IPA (Galaxy/Columbus). Getting passionfruit, yellow peach, grapefruit peel, ripe pineapple, some tangerine, and earthy pine resin. Super soft feel. Glad I finally got to try this one. I'm sure it's not what it once was back in the day, but it's still a solid NEIPA.

    Love that Vietnamese food! One St Pats day at the brewery I made corned beef Bahn Mi's. We did no corned beef and cabbage. Even made the pate from scratch. That and purple potato salad. Not one complaint or request for the traditional stuff. People loved them.

    Now that's an awesome idea! I'm not a huge fan of corned beef and cabbage, so I'm all for any alternatives. I would eat every last bit of that! Cheers!

    It was fkn food man. I'm a fan of the pate as well. I gotta have that to make it authentic- but you could skip if you desired

    I've had some with and some without pate. The one I tried today didn't have it, but I still highly enjoyed it. I can go either way on the pate. I will say it does add a lot to the sandwich and like you said, it's what makes it authentic.

    Pate is the reason I've never had a Bhan-Mi - nope, don't like or want pate. :grimacing:
