    Friday afternoon on the "catio" with a fine West Coast IPA from Von Ebert out of Portland. Those folks really know how how to make beer.

    Personally,I like a fall off the bone rib a lot better than one with some tug. So for me, it's a matter of personal taste - I don't want to have to fight with my food, and texturally, I think a fall off the bone rib is much more pleasant to eat. Enjoy!!

    Yes, they had a display with all the signal flags representing the letters of the alphabet. You could make your name but I made something else.

    von Trapp is one of the few breweries that focuses on styles by Not making 17 hop variations of each style. They doubled up on the most popular styles but mostly rely on that Solid Core.

    I haven't yet tried the Stowe Styles, nice to see von Trapp expanding so cleverly.

    Trösten is worth a look, Prost.

    Another day of grunt work, but this time at the FIL’s now wife’s house 1.5 hours south. Tired of the humidity kicking my butt. I’ve gone full whacko now, beyond even the demon yellow bladder wadder into what most assuredly is Satan’s tainted bow chicka wow wow. This is not beer, wine, liquor or any other reputable adult beverage. For $2.78, I “had” to try it. Put this over shaved ice on a hot day and you’re screwed because you’ll be ten deep. I’m sure I saw a pic, here maybe?, of a kid pounding one of these things. Maybe the folks didn’t see the 8% ABV. Kid loved it, no doubt. :stuck_out_tongue:

    Competition BBQ set some standard guidelines so that competitors and judges in all sanctioned contests were sort of on the same playing field. When it came to ribs one of the guidelines was the tenderness/doneness criteria, which states that the meat on a properly cooked rib should come off the bone with very little effort and only the meat in the bite area will be removed from the bone. Fall-off-the-bone meat was determined to to be overcooked, and meat with too much of a "tug" was determined to be undercooked. In addition, the bone where the bite is taken should actually appear to dry out in a few seconds.

    ...I can go both ways...in this case, I believe my ribs turned out more 'competition' styled in that one did need that 'tug' or 'bite' to get the bite of meat...regardless, I love cooking my meats and seafood with a quality digital thermometer...I did pretty well by feel and / or time prior to that, but in this case, technology certainly helps with obtaining more consistent results...baked the ribs to 201 °F, throw in a bit of rest and reheat the baked beans and let Mrs. BeerGoot prepare the salad...we had a great meal...
