Same as yours. BBQ comps say no no to falling off the bone. I've done quite a bit of smoking and was thinking of competing way back. I am no expert but my personal belief is its alot harder to cook a "just tender" rib than it is to cook a long, long tender cook, you basically can't over cook ribs and I believe that's the issue.
When I have to smoke multiple racks in tbe restaurant I smoke for like 4 hours than sauce and wrap in foil finishing in the oven. These ribs are moist and tender. I was never a foil guy but this works. You hit that point about 165° and your ribs ain't moving in like an hour - that frustrating "lock down" time. Finish in the foil solves it. Pork butt...eh different story.split and cooked as longs as it takes

 

What the heck? A seafood feast in your house tonight .

 

I wish the same could be said for a bass player.
