I've been to few in the Bamberg area, as it is the season. Went to a very traditional one today, that had a barrel of the Bockbier. It easy Free until the barrel was empty! Had to buy one after the barrel ran out. It was fizzy on tap, and not as good.
Sometimes there are scheduling conflicts. The Schlenkerla Anstisch on Thursday wasn't too crowded at 4:00. When we left at 5:30 it was filling up. Pictures from the evening showed the courtyard and street to be completely packed.
