    Wow you did do your research! The temp thing makes sense. A warmer beer seems like it develops a better head than super cold one.

    Right along here ba. Sticking w/ sand city-locals. Thats A Lie, irish stout- good notes of malt, tobacco, smoke. Pretty standard - and not my favorite style by any stretch- but hey st. Pats coming right up,

    Yesterday was my Bill Evans day...today is my Keith Jarrett day :slight_smile: Yesterday was the Evans Complete Live at the Vanguard with Paul Motion and Scott LaFaro.

    Today, is Keith Jarrett's The Complete Live At The Deer Head Inn Recordings. With Paul Motion and Gary Peacock...more than one pattern here :slight_smile:

    Anyway, a couple of Sam Smith Oatmeal Stouts in the glass, and these are divine.

    Busy day for a Saturday, mowed and weedeated the yard, cleaned both mustangs interior then washed and waxed them. The old one will run up the the Hooters car show tomorrow (just to look at others, I don't enter). SN Springfest for the refreshment. The wife just got home from 8 hours of wedding dress shopping in Gainesville with our youngest daughter and her friend. She said there will be tequila later!

    A little bit more info ..

    If the beer is near fridge temperature (34–38°F):

    • nitrogen stays dissolved
    • the widget releases less gas
    • the cascade is weak or invisible

    Nitro beers actually pour best at 45–50°F, not ice‑cold.
    Cold = no cascade.

    You poured too gently

    Nitro cans need a hard, aggressive pour to activate the cascade.
    If you:
    • tilted the glass
    • poured slowly
    • tried to be careful
    …the nitrogen won’t break out of solution.

    The correct nitro pour is:
    • open the can
    • flip it upside‑down over the glass
    dump it in one continuous motion, It feels wrong, but it’s right.

    The widget didn’t fully fire

    Widgets are tiny pressure vessels. Sometimes they:
    • release less nitrogen
    • get stuck under foam
    • don’t rattle loudly
    • fire weakly if the can was stored too cold
    You’ll still get a creamy head, but the waterfall effect may be muted.

    Crack the can open in one clean motion
    Don’t “half‑open” it or ease it open.

    You want:
    • a sharp pressure drop
    • the widget to dump its nitrogen instantly
    A weak opening = weak cascade.

    Immediately flip the can upside‑down over the glass
    This is the part that feels wrong but is absolutely correct.
    Hold the glass at a slight angle, then:

    Turn the can completely upside‑down and pour straight down. Why?
    • Nitro needs turbulence
    • The beer must churn to release nitrogen
    • A gentle pour kills the effect
    Guinness literally instructs this method.

    Pour the entire can in one continuous motion
    Don’t stop. Don’t tilt back. Don’t “top off.”

    If you want the best possible cascade:
    • Don’t pour it ice‑cold
    • Don’t pour gently
    • Don’t use a wet or frosted glass
    • Don’t stop mid‑pour
    • Don’t tilt the can — flip it

    Do these, and you’ll get the maximum cascade the beer can produce.

    Some strange flavors going on here. I can't really recommend it unless less you're into interesting combinations, such as pineapple and jalapeno pizza, which I am.

    About 3hrs ago---- too crowded for me to connect to wifi and horrible cell service.
    Meat Raffle day at Little House Brewing. A really good Irish dry stout on nitro. I had 3 of these and a New England APA.
    We didn't win by the time we left, but my son stayed with our tickets. Fingers crossed. My family has yet to attend one of these and not won something. The owners tease that they are ready to ban us from these (but I think we're too good for their business).
