    That Distal Steak is one of the sexiest pieces of beef I've seen in a long time ( cue the peanut gallery...).

    I usually do 425 for 10 minutes, then toss the asparagus and roast it for another 5 minutes.

    If I do it at 450, I do 8 minutes, toss and do another 4-5 minutes. At the higher heat you get crispy tips. Cheers!!

    My son and I are now having a cellared Westvleteren XII. I think it is from around 2018 or so. We are going to try a fresh XII next.

    Up next (yes, some fridge clearing is happening, why do you ask?) is a 2024 Kirkland (Deschutes) Vintage Ale. Basically Abyss Lite. Nice beer, the roast is a touch strong, but nicely drinkable.

    Since it is asparagus season, it only makes sense to have a Hadley Grass from Berkshire. Hadley Grass is the nickname for asparagus grown in Hadley MA, famous for its quality and tied to a long agricultural tradition.
