Agreed - I think the key is to infuse the oil with the garlic so it doesn't overwhelm. I should have added a little butter, that would have given it a nice richness - something to keep in mind for next time - cheers!!

Today I’m finishing out the diet and beer and Jerky expedition with – what else – ALLIGATOR!

The beer is the same delicious Bud Zero I’ve been sipping on all week. 0% ABV, low IBU, perfect carbonation, perfect clarity, low head, zero lacing......Boy I can hardly wait to be back on standard rations tomorrow!

In the meantime, I figured the Alligator jerky might taste a lot like the Beef/Pork jerky this appears to be blended with. Truth is, I’ve had Alligator a number of times during my previous trips to Florida, and it is such a mild meat (like chicken, really!) it would easily get overpowered by the other favors, which it does. Tastes like standard Beef or Pork based jerky!

That’s it folks, back tomorrow drinking full-strength beer, I can hardly wait!
