    Anyone ever try this recipe for Pliny from an old Zymurgy mag? Would love to give it a go.

    I remember there being something wrong with that recipe... found it:

    Subject: Zymurgy Pliny the Elder Clone Recipe​

    The Pliny the Elder recipe Vinnie Cilurzo originally provided to us (July/August Zymurgy) was in percentages for the fermentables, which we calculated for a 5-gallon recipe. In fact, it should have been calculated for a 6-gallon recipe to allow for the loss of wort due to the hop additions.​

    Taking this into account, here are the adjusted amounts for the fermentables (6 gallons at 1.070 O.G. with 75 percent efficiency):​

    13.25 lb (6.01 kg) two-row pale malt​
    0.6 lb (272 g) Crystal 45 malt​
    0.6 lb (272 g) Carapils (Dextrin) malt​
    0.75 lb (340 g) dextrose (corn) sugar​

    edit: Which on further review seems to be reflected in that recipe, must have been updated.​

    I brewed his "original" recipe years ago with great results. The ones above are already out of date, the beer contains some Amarillo now as well.

    A few months ago I had emailed Vinnie a few questions on a few of his beers and he was very responsive. To add a little bit more detail, per our conversation, Amarillo is used twice - in the whirlpool and in the second dry hop.

    This would blow the lid of my bucket.

    Can you add a blow off hose to a bucket or do I need a big carboy for primary fermentation?

    Not sure why you're saying that: because it's listed as a 6 gallon volume recipe? Part of the reason that's done in this case is because you're going to have a lot of wort that is lost to hop absorption. So the idea is you finish with six gallons in the kettle, leave the trub, and transfer appoximately 5. You'll end up with even less than that, because you'll lose more beer to the dry hops. But it's worth it!

    Edit: And yes, you can rig a blow off to a bucket.

    For the Love of Hops also mentions Amarillo extract mid-boil (edit: for Younger an Blind Pig, not Elder...).

    I've made something very similar to that. Jamil Z's hophammer is a touch bigger and I think I used his recipe spot on. It was ridiculously drinkable after 10 days of bottle conditioning. I saved a few for 6 months and tried them again. They're best fresh before they turn into a barley wine :slight_smile: Either drink a lot, find some friends, or make a half batch.

    You can drill a bigger hole in the lid for a large diameter hose..

    Or you can insert a smaller diameter tube through the existing grommet, if you have a size that's a good force fit.

    Or you can rig a smaller diameter hose to the output of an airlock (without the airlock lid or bell). If you do it that way, you should also cut away anything at the pointy end of the airlock that would block the flow of large particles.

    If you listen to a BN show a year or 2 back, Vinnie said that he was using a little Amarillo in Pliny the Elder, as he liked what it did in Younger. What he puts out there for the homebrewers is a recipe that gets one close. He does evolve his recipes.

    For the 1/2 oz. Amarillo addition in the DH, lessen the Centennial by 1/2 oz to take it's place. At the same time, boost CTZ in the DH by 1/2 oz.

    Use only 2% Great Western C40, instead of 4% Crisp C45.

    I know what you mean. The only "downside" to this recipe, if it can be called that, is that the hop aroma tends to fade pretty quickly (as with PtE itself), and at 8%+ ABV, it's not like I'm going to finish 5 gallons in 3-4 weeks. (I know... it can be done! But I'm old and feeble and my boss expects me to be alert at 7 in the morning.) Not a problem if you don't mind giving a lot of it away.

    Yep - I did mine off that same PDF - great results, with or without the Amarillo subs.

    I was about to make this exact recipe (grain bill at least). I've been saving that link for at least a year. I have the grains ready to order, I was going to follow exactly. Hops wise I don't have all the hops they use so I was going to use magnum, willamette and cascade.


    Hops wise I hadn't decided on a schedule yet but I had some ideas. Lots of hops, for instance. :rolling_eyes:
