    This is the 2019 thread to post all of your brewing activities. A few guidelines...
    1) what homebrew you are drinking has it's own thread so please don't post it in here.
    2) if you are updating on a previous post please do it as a reply to that post so no one has to search the whole thread to know what you are talking about.
    3) post about what you are brewing, what you move to oak, what you soured, what you are blending, what you dumped (and why), what you did right, what you did wrong, etc, but please don't update every week.

    Brewing an IPA on my new Brewer's Edge Mash & Boil: 2 Row, CaraPils, Carastan 30/37, Caramunich 80, and Munich II, Azzaca, El Dorado, and Falconer's Flight, fermented with Imperial's Independence.

    Third straight New Years Day imperial stout brew day. Added some lactose today for a bit more feel and also to compensate for forgetting to add the flaked oats to the mash :rage:. Also added some Dutched cocoa powder late boil. The OG was 1.104 which was only 0.001 short of predicted. Pitched a big starter of 1056. Planning to also add cold brew local coffee and bourbon soaked in oak cubes at kegging.

    First brew of 2019

    South African hopped IPA
    Heidelberg/GP/Carafoam/CaraHell
    CTZ at 60 and Touch in WP
    Southern Star @ 10
    Southern Star and Southern Passion WP

    The SA Hops didn’t smell amazing so we’ll see. The 2018 Columbus I got from YVH smells like a tire fire jolly rancher.

    Couple new process variables to try out this time.

    DIPA brewed on Monday received its ~5oz bio dry hop at around 50% AA on Wednesday and the second primary dry hop (~6.5oz) yesterday at 1.019 (target FG is 1.018 but wouldn’t surprise me if it goes a little further). Will let sit until Sat night or Sunday before crashing and kegging early next week with another 1.5oz keg dry hop (Nelson, Galaxy and Exp. Tangerine mix). This beer is hella-thicc, due to the 2lbs of oats and 3lbs wheat utilized… Very viscous mouthfeel, more than I have ever had before. Looking forward to it being in the glass all carbonated and such.

    I picked up a few clear beer draught system thingy-ma-bobs, so one will be going in this keg for the keg dry hop. I’ve done other methods before with keg hops, but none worked well enough for me. So I am curious how well this thing will do.

    Works great. You may get a small amount of junk at first from sticking to the screen but it's clear after that. Only thing i was worried about was how much liquid it would leave behind when purging and pushing star san out. I think it gets most of it.

    First brew of 2019 prepped for tomorrow - gluten free Vic Secret NEIPA. In my continuing quest for more body and head retention, I will be using 10% Flaked Teff in my grist. I'm hoping the high protein to fat ratio will show some improvement without creating any off flavors...we shall see. Fermenting with M36 and will also blend in some T-58/WB06 (or similar).

    Transfer was a slaughter house. Must have had 2 dozen clogs. Will have to work on that situation later.

    Good news department was a stuck landing at 1.012 FG. Got a 79% AA with a 154 Mash and 1318 yeast. Only 6 oz of sugar. Just the right level of viscosity early on from the sample.

    What are you using to connect the hose to the keg? Is the hose attached to the fermenter lid CO2? Is the transfer under pressure?

    CO2 coming in from the top for the closed transfer. Out spigot hose to disconnect on the liquid out side of keg. That’s the problem spot. Just too many hops in suspension. Cold crash would have helped but didn’t do one this time.

    I'm asking because I haven't tried a closed transfer. I probably need some gear upgrades to pull it off. Currently I flush my receiving keg by displacing sanitizer with CO2, but bring wort in through the main opening with the lid partially disengaged, either via the spigot in the fermenter or a siphon hose, if using a spigot-less fermenter. I know oxygen begins to mix when I disengage the lid but figure I am doing what I can to minimize its presence and it probably helps.

    I kegged a treehouse inspired NEIPA today. Used Juice Machine hopping (galaxy/Amarillo/Citra/Columbus) and a blend of S04/T58/WB06. Smelled amazing. Also put a pils on today to carb that I was trying to naturally carb but messed up on. Moved a RIS from primary to a bourbon barrel. Went from 1.115 to 1.042 so it’s nice and thick

    Got any suggestions to make T-58 less phenolic?Think that’s gonna clash with rakau.

    Kegged my new DIPA, which finished at 8.5% ABV. Cold crashed and racked into a purged keg with an equal 1.5oz mixture of Galaxy, Nelson and Exp. Tangerine as the keg hop. FG is 1.013-1.014 (lower than 1.018 expected). From the samples thus far, shaping up to be the best DIPA I've done for sure. Hopefully it meets those expectations when complete/tapped!

    I'm with @MrOH on the Witbier.
    Rakau is super light and hard to discern, even in larger amounts from my experience.

    Cool I’m thinking fresh lemon grass at flameout with the rakau. Bitter with mt hood.

    Grist will be
    65 pilsner
    25% torrified wheat
    10% flakes oats

    Mash at 152

    Ferment it really cold or really hot.

    It’s straight spice in the middle.

    I just recommend not using it or blending it in very small percentages with something.

    It’s part of the competition. I have to use T58 and only T58. I’ll ferment at 70.

    First time using it. From my hydro samples, I have picked up a juicy orange/tangerine like note amongst the other more familiar flavors from the hops used, which I assume is coming that hop. Curious how it will be in the finished beer, but its promising so far for sure!

    Have you used this before. When i was in NC last summer it seemed like every brewery was using it but i wasn't a fan.

    Seems like the recipe pretty much wrote itself. It is what I figured when I saw the ingredients. I've only use T58 three times that I can recall. Two of them were close to 68F and had Belgian character. The third instance was a mead, at the low end of the temp range, and it did not have Belgian character. I would try low temp.

    Bottled Rye Graff today. BE-134 definitely made this the most apple-y version to date.
    Resisted the urge to dry hop with El Dorado after tasting some commercial brews featuring it and digging the pear flavor.
    Adding some Brett C to the bottles to hopefully boost the fruit and add a bit of leathery funk that is missing from not having traditional European cider apples in the juice.
