I'll review this here, though I don't think the single hop was Centennial. It seemed to be a newer, high-alpha hop like Amarillo, Columbus or maybe Simcoe? The Wait-staff had no idea.

A: Golden-bronze, white head, little retention, excellent lace.

S: Grapefruit citrus, biscuity/light-bread.

T: Grapefruit & nectarine. Awesome fresh hop flavour and great bitterness. It's a little one-dimensional (all-about hops), but there's a light, underlying biscuity malt flavour.

M: Light to moderate body is smooth & creamy

D: Great stuff.

Apparently, Water Street regularly brews single-hop ales with different hop varieties. The one I drank recently was brewed with Centennial. It was exquisite.

The body was gently contoured with a mellow, feathery mouthfeel. I might have thought the beer was cask-conditioned if I hadn’t seen it drawn from a frothy tap. Even the temperature was perfectly relaxed. The brew was dense burnt-orange with a piney-citrus aroma, bold lacings and a velvety head. Hop flavor was skillfully placed forward and accented by punctual bittering. But the hops were gracious in their proportions and never overextended, allowing for integrated malts and perfect balance.

This is precisely what you’re looking for in an elegant pale ale: maximum drinkability with relaxed and inviting properties all around.
