Cask Matured and Bottle Conditioned. Matured in American Bourbon casks for 100 days then further matured in the bottle for 6 years.

500 ml bottle served reasonably cold into a snifter glass. LCBO purchase for $20! Bottle 1/2, the other will hopefully age another couple of years.
Appearance - Dark brown in color with loose two finger sparkly tan head. Impressive staying power that coalesces at a half finger and sparse lacing left behind.
Smell - Rich notes of bourbon and wood, vanilla and some molasses. Not boozy at all, but the depth of the aroma is quite good. Some traces of caramel and the signature Innis& Gunn aroma, but the depth here is impressive. Hints of raisin and cocoa powder as well.
Taste - Wood and bourbon is certainly there. Quite a bit of raisin and chocolate as well. Being near Halloween, reminded me a little of Glosette Raisins as a kid. Booze is only noticeable after a couple sips from the back of the throat. There's a thinness to the flavor that is a little less than impressive. This sensation fades after a couple sips and the depth of the flavor really starts soaking into your tastebuds.
Mouthfeel - Carbonation is quite high, maybe too high. Body is medium-full, with semi-dry finish.
Overall - I like it a lot, but for something this extravagant in price, I was hoping for a little more fullness to the flavor and a little less carbonation. The nose is great though and overall this makes this a small miss. Will venture back in a couple of years to see if anything has changed. Worth a try if you have a cellar or are into these types of things, but probably best shared with a friend.
