Canned 2/6/23. Drank 4/4/23
Pour is a light copper. big, fluffy off white head. Good retention
Nose is mango, berries, tropical. Almost 2 months old, but everything 'pops'.
Taste follows. Berries, citrus, tropical fruit, a hint of pine, grapefruit rind, firm bitterness. supported by moderate bready malt backbone.
Mouthfeel is smooth and crisp. moderate carbonation. beer does not get sweet, thick, or cloying.

Poured from a can into a pint glass
Appearance – The beer pours a clear golden color with a one finger head of white foam. The head has a decent level of retention, fading over time and leaving a moderate sum of foamy lace on the sides of the glass.
Smell – The aroma is huge of a tropical fruit smell, being heaviest of a pineapple and papaya smell, but also having strong aromas of tangerine, mango, and papaya. Along with these smells comes a light doughy smell with aromas of a bitter grapefruit rind and some light notes of herb. With these comes a little bit of a pine and a touch of grass.
Taste – The taste begins with a cracker and bready flavor mixed with hop flavors of bitter ruby red grapefruit. While heavy in the nose, the tropical fruits a lighter on the tongue, with just a modest showing. As the taste advances the grapefruit gets more intense and more bitter and is joined by flavors of an herbal and floral hop. Toward the end, there is a slight increase in the breadiness with a touch of grain, leaving one with a moderately citrusy hopped taste to linger on the tongue.
Mouthfeel – The body of the brew is medium in thickness with a higher carbonation level. For the bitter citrus grapefruit tastes mixed with the bits of tropical fruit and the middle of the road maltiness, the feel is good and makes for a rather dangerously easy sipper at 9 % abv.
Overall – Another good renditioning of the High Boy. Always rather flavorful and easy drinking.

So far everything independence highboy is coming up roses.

The mosaic version has a wonderfully thick and chewy body to compliment its tingly hop crispiness. Sometimes I wonder if there really is no limit on the spectra of flavors produced by the amazing hops plant.

Hop heads will not be disappointed.
