its neat that the hoppy beers in here have taken a turn for the modern, and that rotating ipa series is keeping some fresh and exciting hops coming through the brewery. i was stoked to see this simcoe, calypso, and cascade concoction on tap while we were in, its a unique combination of hops, driven by the simcoe to me, but subtle unique, and pretty clean as they go despite the thicker look to it in the glass. real pale, lasting white head, peachy and stone fruity aroma, must be the calypso, i am least familiar with this one, but still packed with bitter grapefruit character and some resinous weed character, almost mouthwatering to me, very fresh, and without any apparent over hopped harshness. the flavor is soft but pungent at the same time, no rough edges to this, super smoothed out by a kind of raw and seemingly oaty mash, a very gentle texture for such a hoppy brew, especially without tons of bubbles. pink grapefruit, orange pith, kiwi fruit, ripe apricot, and honey notes, there is some sweetness in here that seems to accentuate the hops without making this heavy to drink at all. there is a little bit of yeast to it, not english or anything, but maybe that vermont type coming into vogue that leaves a little residual doughy thing in these, not sure, and its not off, but its there. overall a solid brew, a touch raw to me, but with a great hop combination and really honestly unrecognizable from the last generation of middle ages ipa types. i hope to drink more from this series!
