my first beer from these guys is a real tasty one, maybe not a conventional wit as i was anticipating, but something complex while being delicate at the same time, very summery, versatile, and delicious. its super heady, rising up with a few inches of airy white foam on top of a uniformly hazy pale wheaty looking body. the nose is slightly bretty, perhaps unintentionally, but its flattering to me, not a wild beer, but there is more than just belgian wit yeast in here, thats for sure, and i think the light funk there with the belgian fruity esters is a great combination. the malt base is light to me, medium bodied but really mellow in flavor, without the textural heft or the cerealy flavor a lot of these have. notes of lemongrass, green apple and pear, and dried apricot in the yeasts, light farmhouse funkiness, and a drying tendency in the finish with flashes of cooked banana and white wine, white pepper, and hay. its summery and its delicious, its absurdly highly carbonated which makes it refreshing, and its just different enough with the yeasts to stand out. i had a ton of good beer yesterday, and this ranks up there with the best. unexpectedly unique and really well done.

Had this one at the source during a friend’s bachelor party! Tick all day, every day! Served from tap into a sampler shaker. Poured a hazy pale yellow with a half finger white head that subsided to a minimal amount quickly. Maintained nice lacing throughout the glass. The aroma was comprised of sweet malt, wheat, banana, fruit, and orange zest. The flavor was of sweet malt, wheat, banana, fruit, subtle spice, and subtle citrus. It had a light feel on the palate with medium carbonation. Overall this was a pretty decent brew. For the style of this one I was really quite impressed as usually some brews are not known for having a lot of complexity in them. However, this one did manage to have quite a bit going on. Unfortunately though, the flavor and aroma was quite light which likely masked quite a bit of the more subtle things going on. This definitely hurt its score as it could have been a really good one. Definitely worth trying if you go to the brewpub. Tick.
