Pours chestnut brown into a snifter with an attractive beige lace. Nutty aroma with plentiful sweat breads and malts. Flavor is nutty with some nugget. Here too sweet malt flavors are large. Light caramel covered banana notes are found as the beer warms. Some wood too. Body is fairly light and dry. Very clean with no off flavors. Drinkable.

Encore has a deep, clear chestnut hue, with glints of ruby at the edges and when held up to light. Some rather uninterested carbo slowly meanders topside. Head is creamy and beige, hitting about 1/4" to start but receding quickly. Bubbles are extremely fine, and tend to be rim-clingers, save for some wispy bits in the center. Leaves a nice lace job in the chalice. Aroma is lightly malty, with some nutty notes, as well as some cola-like traits. No hops found in the aroma, as far as I can find. Encore goes over the tongue rather well. Fairly smooth and doesn't stir things up at all. Body is a solid medium.

Flavor checks-in with a decent amount of malt, producing some roastiness, a smidge of nuttiness, and some dark choco/cocoa action leaving a bit of bitterness behind. Beneath this are some hints of dark fruit action, with some evidence of florality at the finish. Not overly Dubbel-ish, imo. As some BAs have stated, perhaps more like a strong Brown.... I concur. Regardless, still quite drinkable. The abv seems (note: seems) well-hidden, though in little time at all I was feeling the effects.

This Encore presentation was courtesy of a growler of said liquid I scored from the Belgian Bier Fest last October. Has held up well.

This dubbel poured an opaque, dark brown color with chestnet near the edges with tan foam that settled flat. The smell was malty with some malt sweetness. The taste was malty with flavors of sugar, dark caramel, and a hint of woody bourbon. There was modest sweetness throughout and low hoppiness. The mouthfeel was smooth with medium body and low carbonation. The maltiness lingered in the aftertaste. This was an OK dubbel, with a taste and feel reminiscent of a brown ale.

A dark brown beer, slightly cloudy, with a thick off white head. Good lacing as the head dies quickly. Some fruit in the nose, sour cherry, date, fig, and a tiny bit of hops. Tastes sweet at first, mollasses and caramel, then tiny bit of alcohol warmth, and a fig like finish. HAs a chewy mouthfeel, and a long finish.

On tap at TPH in Brookline 5/1/06. Served in an oversized wine glass.

This is another very good offering from Sixpoint, which is quickly becoming one of my favorite breweries in the world. Encore is very tasty; in many ways it is a baby Sixpoint Express. The smell and taste are defined by the same sweet apple flavor of the yeast. It is by no means sickly-sweet or syrupy, which is the beer's greatest assets. It is highly drinakable and could be dangerous if it were ever bottled.

On tap at the Sunset.
Presented murky brown, with a tan, creamy head.
The dense, fine, thick bead retained throughout, leaving rings and curtains to the bottom.
Aromatics are extremely nutty with dried cocoa and esters.
Intriguing nose, not exactly to dubble style, but good nonetheless.
Powdered chocolate over nut- laden bannanas.
Alcohol is minimal in the nose, with a hint of vanilla in the finish.
Body is mediumish, leaning towords chewy, with a delicate creaminess.
Pallet is full of caramel, nougat, and bakers chocolate.
A nutty dryness works well with the residuals and some slight warmth.
Finishes mildly sweet, with a light bitterness, and gummy.

12 oz homebrew-looking bottle "i handbottled all them shits"

funny this is called "encore", i had two bottles and smashed the first one to pieces (one of which had to be removed from my finger) pre-consumption.

clear chestnut pour with dark brown glowing highlights- pure belgian dubbel head.. ring of creamy foam and small random islands of bubbles. aroma is unexpected.. lots of lightly toasted malt with very nutty notes. if i didn't know better, i'd guess this to be an american brown based on the scent. there is a hint of something estery here but the peanut butter prevails. perhaps some chicory as well. tastewise, this screams american belgian. big figgy fruit, overripe raisins and slight heat. mild licorice in the aftertaste and more hops than most belgian beers have the right to contain. none of the sweetness or banana/apple you'd expect from a dubbel. perhaps a lone cherry atop this beast of a beer.

alcohol wafts dangerously off the surface.. drinkable for something so upfront and aggressive with flavor, but messier stylewise than i care for. the deviation from true trappist paths is what gets me here.. excessively complex, too much so for its own good.

time and patience will aid this beer, as will re-classification.

This brew, sampled on tap a the BTAH in NYC, poured dark copper, with a puffy off white head, and showing off nice lacing. Notes of banana, toffee, chocolate mousse. tasty and strong, complex, smooth and satisfying. Lacking in the hoped for Belgian yeast notes department, more of a straight ahead tasty ale. Fairly sweet, but certaintly worth a try.
