Purchased at the LCBO for $10.95 for a 750ml bottle. Served at 7deg C in a draught glass
A- Opens well and pours a 1" high white head that lasts for a couple of minutes before film out. Medium brown colour and unfiltered.
S- Sour and spicy
T- Hibiscus, sourness, fruit, cinnamon and some other spices that are difficult to put my finger on. Very unusual and a breath of fresh air. Not a lot of bourbon barrel here. Some oak but this must a second or third use barrel. The oak sure does add quite a bit to the brew though.
M- Fairly creamy
O- Very nice and well blended. Nothing sticks out at you
Food Pairing
This brew was a bit difficult to pair due to the spices but it did go well with........ Home made mac and cheese. Very nice little pairing with the cheese and cream. Had a taste of the roast beef I made at the same time as well. Pretty good

A very interesting style of beer - first time with this type of genre. There are loads of flavours in the brew which make it very complex and white wine-like in taste.

Served at 4 degrees to begin, and enjoyed over the course of roughly 2.5 hours to note changes as it warms.
Look - Very murky brown with a very thick, khaki coloured head. Head leaves a good amount of lacing.
Smell - Very vinous when opened. Strong smells of the dark fruit, figs and raisins, giving it a very wine like aroma. The booze is there but not overpowering for the style. As it warms the oak and bourbon really start to come through. Some spices are there as well, a touch of the cinnamon and some all spice.
Taste - Very similar to the smell. Plenty of oak and dark fruit. A touch of said spices and some vanilla comes through. Very complex, but the flavours come together wonderfully. Not getting much of the orange peel or black pepper but perhaps that's just me. Of course the booze finishes with a warm feeling at the end.
Feel - Feel is spot on. I've read that some think it is a touch light for the style, but it's ideal for what I was anticipating with this beer. Carbonation is fairly light, with the brew at the perfect level of thickness so that one could take down the whole bomber over the course of a couple hours.
Overall this is a fantastic beer from Nickel Brook. The best I've had from them so far. Looking forward to trying their Bolshevik Bastard later this evening!
