The Uncertainty Principle series continues with another uniquely complex brew that will never be repeated. Uncertainty Principle No.7 is bright and zippy, with pleasant notes of ginger, lemon, and orange. The aroma of citrus and stone fruit are greeted with a mildly sour finish, and a hint of salt.

500 ml bottle from the brewery for about $7 CDN. Listed as having been barrel-aged in Chardonnay and Gin barrels with Orange Zest. Served cold in a weizen glass.
Appearance- Semi opaque pale golden color with orange highlights. A small half finger of head is poured and fizzles out leaving a small soapy collar. No lacing to speak of.
Smell - Loads of depth here. Orange and white grape initially, some wood and then lemon and juniper from the gin. Quite bright aromatically as otherwise it's not that far from orange marmalade. Some floral bouquets in the background. Pretty awesome stuff here.
Taste - Orange and lemon with the white grape coming through. Tart but not excessively so. Balanced and nice really between the multiple flavors. Juniper and lemon and orange again towards the end, with a casual wood undercurrent. A hint of gin in the aftertaste. A little salt to pull everything together.
Mouthfeel - Medium-light bodied, spritzy carbonation and fairly dry finish.
Overall - Quite honestly one of the best sours I had from Ontario, everything works very nicely in balance and is flavorful, aromatic and east to drink. Well worth the investment.
