From cask to stemmed wine glass at ChurchKey on 2/21/11

A: Reasonable dark brown leather in color. Zero head and lacing.
S: Slighlty herbaceous, with hints of chocolate mocha and toasty smoke.
T: Earthy milk chocolate. The tannin and complexity of the cask really seems to add a good amount of flavor and balance to what I can only assume to be a fairly blase brew. The alcohol is well hidden.
M: Minor carbonation, though quite smooth.
O: What a different beer, though I can't say that I was wild about it. It certainly improved as it warmed. In the end I'm glad to have tried it.

Served on draught into a 20cl Mikkeller stemware glass at the Mikkeller Bar in Copenhagen. Reviewed from notes.
A: Pours a one finger head of nice cream, fair thickness, and decent retention. Colour is a solid black; nontransparent.
Sm: Caramel, vanilla, cream, and slight chocolate. A mild strength aroma.
T: Creamy open. Some strange raspberry and strawberry esters near the climax. Vanilla and chocolate are present. Complex. Well built and balanced.
Mf: Smooth and wet. Not too thin, but perhaps a bit too thick.
Dr: High ABV, great drinkability, high price (40 DKK), and good quality. Fans of the style should try this. I liked it but I wouldn't get it again - at least not at this price.

Special version of the Stillwater/Oliver Channel Crossing #3 on cask at Churchkey, the reason why I'm adding this as an additional beer is because I had both the non-cocoa nibs / vanilla bean version and this one and they were totally different.
Beer is brown with a slight haze, served on a handpump into a snifter. Thin wispy head of small tan bubbles, no lacing low carbonation. Looks fine.
Aroma is has a lot of vanilla at leadoff and finishes with some yeast sweetness and a lot of chocolate, almost smells like a tootsie roll.
Beer is thin but not hot, that's good. Beer is sweet, lots of vanilla and chocolate. Almost tastes like a vanilla coke or something, it's very sweet. Probably a little too aggressive with the spices but overall it's a decent beer. I liked the non-cask version better.
