For the 50th anniversary of our dear master brewer, Jean-Francois Gravel, we brewed a stout with cocoa, vanilla, hot peppers (Ancho and Guajillo) and cinnamon, as well as a subtle touch of smoked malt. This completely black ale gives way to a generous beige collar. On the nose, the ingredients blend into a rich aromatic profile. The spiciness of peppers balances this gourmet beer, while giving way to the bitterness of cocoa and the sweetness of vanilla. Happy birthday J-F!

I was in Quebec recently and my friend had some of this for me to drink and a few to bring back to the states. Stouts are close to my favorite beers and I am real picky about rating them. This is a nice, but not outstanding, Stout. Slightly watery for me if that makes sense. Certainly glad I have some to be able to try more than one. I would buy it and serve it to friends FYI.

Bottle. Tan head. Light lace. Black color.
Tastes like cocoa powder and dale chocolate. The vanilla shows a bit. It has a chalky mouthfeel to it. Kind of bitter chocolate. Not my favorite from these guys.

Coal black, opaque body; incredibly dense and sticky khaki head. Sweet aroma, primarily caramel and brown sugar. Excellent flavor; roasted and slightly charred grain; nice overall sweetness; vanilla; a subtle underlying bitterness. Hea avy body yet rather drifting towards a subtle softness; crispness noted underneath the sugary sweetness; somewhat dry, somewhat sweet mouthfeel.
This is a very nice stout, rather sweet in nature yet displaying some fine, mellow dark undertones.

This was a pretty good stout that I tried for the first time, but perhaps not my favorite
Look: black with a finger thick mocca colored head
Aroma: roasted malts, dark chocolate, a bit floral
Taste: The flavor is roasted malts, dark chocolate, some vanilla, and a mild hoppy flavor at the end that taste like pine or bourbon.

It's alright, a little bitter for a stout. that is what makes it an American stout. Felt a bit watery at first but that went away after a few sips. Nice coffee flavor.

Nice big thick beige head, decent sticky lacing. Nose starts out with a brothy coffee with just a touch of date. Taste opens up with the date thing before it quickly goes to coffee, finishing with a great French toasty black coffee bitterness. Aftertaste is the same bitter with maybe a little sweetness before this thin to medium bodied beer fades away.

Not a bad stout but more thin, watery and flat than I was expecting from this solid brewery. Aged 3 years in the bottle. Pours a nice very dark brown color with minimal foamy tan head and no real lingering lacing. Smells more faintly of chocolate and roast coffee. Tastes surprisingly muted, more faint medium roast coffee, milk chocolate mocha, vanilla, malt and caramel. There’s also a little roasted nuttiness in the background. Nice flavors but really wish they could have been more in the forefront. Smooth thin mouthfeel, no real creaminess to speak of. Decent carbonation. Beer just felt a little lacking in boldness, complexity and depth.

Appearance: The beer has a black body and a medium-sized light khaki head that is frothy. It has good head retention and lacing.
Aroma: The beer has an almost woody aroma to it. There is a light bit of pine in the background. At times it smells a bit like bourbon.
Taste: Up front there is this soft flavor of baker's chocolate that is very recessed as if it is melded with the faint flavor of wood. It has a bit of a cherry tartness when the beer is first consumed and then this fades quite a bit as the beer warms and sits. An interesting evolution in this beer is that it has a bit of vanilla in the aftertaste when the beer warms and sits.
Mouthfeel: It has an almost milky smoothness but it remains rather thin as it travels across the palate.
Overall: The label states that this is a "Stout brewed with cocoa and vanilla" yet it doesn't translate in the aroma at all. Although these traits do show up in the flavor of the beer, it really doesn't do a great job of representing these flavors to their full potential. If one had to characterize this beer, it would be "soft and gentle" as everything seems to have been done very light-handed. I would still recommend the beer because it is tasty. I would recommend letting it warm up quite a bit before drinking it, and drinking it before other more flavorful beers to accentuate the flavor.

Pours black with two fingers of khaki foam that retains fairly well. Aroma is simple stout notes, hitting roasted and toasted malts with a dry, biscuit malt behind. It smells dark, and straightforward. Flavor profile is roasted and toasted malts with a little oat, caramel, and toffee in the mix. It has a smooth, dry flavor profile with just a hint of sweetness. Mouth feel is medium in thickness with a grainy, semi-harsh carbonation texture. Overall, a stout that focuses on being a stout. Not super loud or overdone, remaining well fleshed and modest.
Served in a Teku 3.0 from a 12oz bottle.
