Apricot Tripel
A reinterpretation of a classic beer. Dry beer with a spicy character balanced by an herbal and floral bitterness, rounded out with a touch of fruity apricot flavors. Everything is crowned with a lovely, acidic bite.

341 ml bottle, from Vinmonopolet, Nettbutikken. ABV is 9%. Hazy yellow colour, moderate white head. Strong aroma of apricots, candy and Belgian ale yeast. Fruity flavour, again notes of apricots and Belgian ale yeast, hints of citrus peel, some hops in the finish. Not a beer I'll bother to buy again.

Poured into a Gulden Draak tulip. Pours a hazy golden orange with a fine, three finger white head that keeps building for a while, with think lacing. Aroma of mild grainy malt, apricots, a hint of citrus. Flavor is grainy malt, apricot, grapefruit, apple and clove. Semi-dry, sightly astringent finish with light tartness. Medium bodied with sharp carbonation. The profile tasted much more like a spiced saison than a tripel. The clove and spices tasted oddly like brett yeast, although that is not listed as an ingredient. Nice apricot character and good farmhouse notes. Except for the malt not feeling that much like a tripel (and the fruit leans a bit tart), an interesting and pleasant ale. It's been a while since I've had anything from Dieu du Ciel and I'd like to see more of their well made beer in our market.

A: The beer is very hazy yellow in color—too hazy to see if there is any visible carbonation. It poured with a quarter finger high dense bright white head that slowly died down, leaving a thin head covering the surface and lots of lacing down the sides of the glass.
S: Moderate aromas of fruity esters—apples and apricots seem to stand out in particular—along with notes of floral hops.
T: The taste follows the smell and has lots of flavors of apricots along with notes of candi sugar and herbal/spicy hops. The alcohol is very much hidden.
M: It feels nearly medium-bodied and dry on the palate with a moderate amount of carbonation.
O: I really enjoyed the aromas and flavors of apricots in this tripel, which seemed to intensify as the beer warmed up, but these were to some degree balanced off with contrasting flavors of herbs and spices. It is quite easy to drink compared to other beers in the style.

Medium: Capped.
Opacity: Deep hazy and cloudy.
Color: Golden orange.
Head: Weak half a finger.
Legs: None, but decent swirl reaction and lacing.
Smell: Caramel/Stone fruits/Alcohol.
Taste: Apricot/Lime/Clove/Wheat
Feel: Citrus/Spicy/Floral/Straw.
Body: Slick, a bit smooth and oily, medium to full.
Carbonation: Fine crisp.
Overall: Quite warming, slightly vinous and tart. High quality.

Bottled on 8-21-17.Poured into a large tulip glass a murky hazed tangelo color with a nice almost creamy-like half finger white head atop.Yeasty aromas with lightly spiced phenols and and apricot puree,the alcohol comes thru giving the nose a kick as well.Apricots up front on the palate with quite a sour bite,spiced phenols play a role with a touch of the herbal and slightly medicinal hop flavors in the finish.I'ts quite acidic and the alcohol doesn't clobber you,well made.

it has been awhile since i have seen anything new or different from these guys make it to colorado, i was stoked to find this! its a classic belgian tripel type, but brewed with apricots, and a lot of them. its sexy in the glass, frosted pale orange with a tall and lasting white frothy head. it smells a little tart, unexpected in the base beer, maybe from the fruit somehow, but it seems to prevent this from ever getting sweet when i taste it, even with all the fruit. there is a lot of yeast esters to this, almost distracting from the apricot to me, pear and wine to it, but a lot of it, some peppery spice there too. sweet from the grain up front, then the fruit, then the tart and esters, tons of bubbles pushing it along kind of swiftly, and without ever giving the pretty strong abv a chance to show itself in the taste. its smooth and almost easy drinking for what it is. i like the natural apricot flavor in here and its neat to have fruit in a good tripel like this, not enough of these around. the tang is interesting, the yeast is strong but good, and overall its another interesting and delicious beer from these guys that will probably never get the attention it deserves. i look forward to dusty bottles on shelves marked down to a buck or two in a few years. thats the fate that all of their stuff seems to unfairly suffer here...

L: Poured from a bottle to a goblet. Had a golden-orange color and a cloudy consistency. there was a half inch of foamy, somewhat long-lasting head. Pretty good lacing.

S: A very good aroma of apricots (of course), Belgian yeast, a floral quality, apples, and spices.

T: Tasted of moderate amount of Belgian yeast (not overly prominent), a good shot apples, enough apricots, spices (coriander, pepper), some of the floral quality, and citrus (orange). An interesting flavor for a tripel, mainly due to the inclusion of apricots. It's fruity, but not overly sweet or cloying. Pretty tasty.

F: A well-carbonated beer with a lively finish. Medium-bodied.

O:A solidly made, subtle beer. Definitely drinkable.

11.5 ounce bottle into chalice, bottled on 8/21/2017. Pours moderately hazy/cloudy deep golden amber/light orange color with a 1 finger dense and rocky off white head with amazing retention, that reduces to a nice cap that lasts. Thick soapy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big juicy apricots, peach, pear, lemon, orange, fruit skin, pineapple, melon, red apple, peppercorn, clove, coriander, wheat, cracker, white bread, herbal, floral, grass, and yeast earthiness. Damn nice aromas with great balance and complexity of apricots, fruity/spicy yeast, pale/wheat malts, and light-moderate earthy hop notes; with great strength. Taste of big juicy apricots, peach, pear, lemon, orange, fruit skin, pineapple, melon, red apple, peppercorn, clove, coriander, wheat, cracker, white bread, herbal, floral, grass, and yeast earthiness. Light-moderate peppery yeast spiciness, herbal/floral/grassy bitterness, and light fruit tang/tartness on the finish. Lingering notes of apricots, peach, pear, lemon, orange, fruit skin, pineapple, melon, red apple, peppercorn, clove, coriander, wheat, cracker, white bread, herbal, floral, grass, and yeast earthiness on the finish for a good bit. Awesome complexity, robustness, and balance of apricots, fruity/spicy yeast, pale/wheat malts, and light-moderate earthy hop flavors; with a great malt/bitter/spiciness balance; and minimal astringent flavors after the finish. Light-moderate increasing dryness from bitter/spiciness and carbonation. Medium-high carbonation and medium-plus body; with a very smooth, moderately creamy/bready/grainy/sticky, and lightly acidic/tangy/tannic balanced mouthfeel that is great. Minimal warming alcohol for 9%. Overall this is an awesome fruited tripel! All around great complexity, robustness, and balance of apricots, fruity/spicy yeast, pale/wheat malts, and light-moderate earthy hop flavors; very smooth and easy to drink for the ABV; with the moderately bitter/spicy/drying finish. Really well balanced all around. Super juicy apricots, well rounded fruity/spicy yeast complexity, and pale/wheat malt backbone. Not overly sweet/heavy for the ABV, with plenty of dryness. A really enjoyable offering, and spot on style example.

The classics are classics for a reason. But sometimes captive by their own history, many of the classic styles of beer die a slow death because of their inability to modernize. The tripel ale is suffer no such fate in the capable hands of Brewey Dieu du Ciel.

Their apricot tripel, Genese, pours a cloudy golden color with a foggy matte finish. Its luxurious eggshell foam precedes a perfumy aromatic display of stone fruit, tropical fruit, citrus and slight peppery twinge to the nose. Firmly malted, the taste is invitingly light with honey, fresh baked bread and an overall confectioner's character to offer a sweet start to the session.

As the ale unfolds on the tongue, the malt sweetness slowly renders to a rich grain profile while a rise of fruit esters bring a natural pear, lemon, apple and melon flavor that invites a peppery balance of white pepper, clove, coriander and a hint of fennel. But an overcast of apricot brings the uniqueness of the stone fruit to the taste along with its common mango, tangerine and cantaloupe-like charm.

A peppery bitterness and a faint wine-like acidity adorns the finish while its hop character is mildly grassy, herbal and minty for added balance to the copious fruit additions. Its medium full body has the ale tasting bright and refreshing, but its vinous strength would suggest a slower sipping affair. A medium long aftertaste is peppery, hay-like and bracing with a strong pectin bite.

Pale orange. Smell is mild Brett and some apricot. Initially, the Brett hits you in the face, but dies down as you drink it. Tart with mild acidity. Not overly boozy for the ABV. Dry mouthfeel. Tasty.

Soft golden and hazy with lots of slow rising, fine bubbled carbonation. Topped with 2 fingers of white head.

Smells of pears, apple sauce and cloves. Belgian phenols are evident in there as well.

The taste follows the nose then adds in some really floral notes consisting of a bouquet of unique scents. Finally, a weird sourness comes in that makes me wonder, and a hint of rust, which also raises suspicions.

Medium body with moderate, foamy carbonation, and a tannic finish.

Got this at Gatineau IGA, drinking in Quebec Dec 21st, 2017. Really good brew with some flaws, but perhaps its been on the shelf too long.
