Decent bar-pour head which leaves a chunky blanket of lace. Orange amber color with lots of cloudiness.
Plenty of grapefruit aroma from the hop. Very fresh.
Classical DIPA flavors: mild pale malt start, mild hop swallow, bitter aftertaste which lasts a very long, bitter time. Decent body with a higher level of carbonation. Smooth yet very strong. Lots of lingering alcohol presence.

Notes from recent trip to the Montreal Dieu du Ciel brewpub. (6/9/09)
Centennial Imperial Pale Ale
Dull amber with thin off-white head. Nose is pungent bitter orange with new pine buds and some slick malty caramel. Palate is medium, bright and aggressively hoppy. Somewhat sweet up front with a quickly fading body that fights for control, but the hops win. Citrus and dried weeds are the finish. Spicy and bitter.
Tasty beer!
